Swamp Soup

Soup season or not, a bowl of good soup is always welcome. This Swamp Soup is hearty, satisfying, and full of bright, savory flavors—plenty filling enough to be dinner with nothing more than a simple side of bread.

The name “Swamp Soup” comes from the appearance of the abundant greens floating in the broth. Don’t let the name fool you; the combination of smoky sausage, savory stock, and tender vegetables creates a comforting, wide-appeal soup that even picky eaters often enjoy.

This recipe is also incredibly approachable. It gives you slow-simmered depth without the long wait: sauté the vegetables and aromatics to develop flavor, then add canned beans and seasoned greens for creaminess and body. The result tastes like it simmered all day, while still being easy enough for a weeknight.

I’ve made this while multitasking—yes, even holding a newborn on my hip—so it’s forgiving and simple to prepare. A bit of chopping, a quick sauté, then everything simmers together until the potatoes and greens are tender.

This soup delivers a deep, layered flavor without long braising. Sautéing the sausage, onions, and vegetables first adds caramelized notes and complexity. Canned navy beans and seasoned black-eyed peas add creaminess and body, while canned greens and tomatoes provide texture and savory lift.

For serving, this soup stands on its own, but it’s lovely with a chunk of warm cornbread or crusty bread and a simple green salad. A squeeze of lemon, a dash of hot sauce, or a sprinkle of grated Parmesan brightens the bowl at the table.

Soup Recipes

If you enjoy this soup, consider adding more easy, comforting recipes to your rotation. Here are a few soup ideas that offer big flavor with home-cook-friendly methods: lasagna-style soup that captures classic lasagna taste without the fuss, a soothing Caldo de Pollo with tender chicken in a bright broth, and a creamy tomato-basil soup that’s perfect for preserving summer tomatoes in the freezer. Lighter fish-based soups like salmon chowder and hearty stews such as lentil stew or curried beef oven stew are also great options.

Vegetarian options include thick, tomato-forward black bean stew with roasted sweet potatoes and soft black beans, which is a satisfying meatless bowl that still feels hearty and comforting.

Smoky kielbasa, loads of tender vegetables, and abundant “swampy” looking greens make this simple Swamp Soup a deliciously healthy and substantial meal. It may not be the prettiest soup on the block, but it sure tastes amazing!

Equipment

  • 1 chef’s knife
  • 1 cutting board
  • 1 6 quart or larger stockpot
  • Measuring cups and spoons

Ingredients

  • 1 pound kielbasa or smoked sausage cut into 1/2-inch circles
  • 1 onion diced
  • 2 ribs celery diced
  • 2 carrots ends trimmed, peeled, and diced
  • 2 jalapeños stems and seeds removed, finely diced
  • 4 cloves garlic peeled and minced
  • 5 medium white or gold potatoes scrubbed and diced into 1-inch cubes
  • 1 can Southern style seasoned mixed greens 28 ounces, include the juices
  • 1 can Southern style seasoned black-eyed peas with the liquids, or use 1 can plain black-eyed peas drained and rinsed
  • 1 can diced tomatoes and green chiles 10 ounces, with the juices
  • 1 can navy beans drained and rinsed
  • 6 cups low sodium chicken stock or broth
  • 4 cups kale or spinach cleaned and chopped
  • 2 cubes chicken bouillon
  • 1/2 teaspoon smoked paprika

Optional garnish:

  • hot sauce
  • fresh lemon wedges
  • grated Parmesan cheese

Instructions

  • Place a 6- to 8-quart stockpot over medium heat. Add the kielbasa or smoked sausage rounds and cook about 5 minutes, stirring frequently, until browned on the cut surfaces and they release some drippings.

Add the onion, carrots, celery, jalapeños, and garlic to the pot and stir to coat in the sausage drippings. Reduce heat to medium-low and cook, stirring frequently, about 5 minutes, until the onion is semi-translucent.

  • Add the remaining ingredients to the pot. Raise heat to medium-high and bring the soup to a boil, then reduce to medium and simmer for 20 minutes, stirring occasionally, until the potatoes and greens are very tender.

Serve as-is or garnish with hot sauce, a squeeze of fresh lemon juice, and grated Parmesan.

Notes

If you use a low-fat sausage such as chicken or turkey sausage, add 2 tablespoons of olive oil to the pot before adding the sausage so there’s enough fat to sauté the vegetables.
