Chilled Two-Wine Spritzer Recipe: Refreshing Two-Wine Cocktail

I am not a fancy person. When my husband and I got engaged, we skipped the traditional registry for silver or china. In truth, we probably registered for nothing. To me, if you have canning jars, you’re set. Plates and matching cups are nice, but optional.

If you visit, chances are you’ll find yourself sitting on the ground—on a comfortable blanket, of course—balancing a plate on your knee while we chat in the yard. If we are at the table, our dishes will likely clash: mismatched plates, well-worn utensils, maybe a chip in a bowl. Still, you’ll be warmly welcomed.

My grandpa used to say, “You can put lipstick on a pig and it’s still a pig.” I live by that sentiment. I’m not pretending to be anything I’m not. I’m glad to see company, but I’m also perfectly fine being a piglet. I like our hectic, full house of boys, chickens, dogs, ducks, cats, musical instruments, tools, paper Viking ships, and books. It’s chaotic, but it’s ours.

My approach to summer drinks is just as simple. I want something refreshing and fast—something I can mix up in time to sit on the porch and watch the kids ride their bikes as the sun sets. It has to be jar-friendly and not too strong. Think light and easy.

If you prefer elegant cocktails, you might want to look away for a moment. For everyone else, here’s a perfect summertime option: a three-ingredient mixed drink served over ice, made from pantry-friendly items, and assembled in the time it takes to swipe on a coat of lipstick. Unsophisticated? Maybe. Delicious? Absolutely.

It’s fizzy, fresh, light, and icy cold—the kind of drink that says summer is right around the corner. Come on over and I’ll make you one. It’ll probably be in a jar. Is that okay?

A light, sparkling warm-weather drink that’s refreshingly simple. It may not be sophisticated, but it hits all the right notes for easy summer sipping.

Ingredients

  • Crushed or cubed ice
  • 3 tablespoons plum wine
  • 4 ounces Pinot Grigio or any semi-dry to dry white wine (about 1/2 cup)
  • Chilled plain seltzer water

Instructions

  • Fill a tall glass (about 10 ounces or more) with crushed or cubed ice. Pour the plum wine over the ice, then add the Pinot Grigio. Top the glass with chilled seltzer water to taste. Let the bubbles settle for a moment, then give the drink a gentle stir with a chopstick or swizzle stick. Enjoy slowly and happily.
