Today’s Black Bean Tacos are a lightning-fast, fresh, and delightfully satisfying vegetarian meal that comes together in under ten minutes. These tacos aren’t missing anything— they’re simply meat-free and perfectly balanced as written.

I create simple, affordable recipes that actually taste good — not just “healthy” for the sake of it. These Black Bean Tacos are a perfect example: nutritious, budget-friendly, and satisfying enough to keep you relaxed while you enjoy the evening.
Why make bean tacos?
This recipe checks several boxes. On the health front, black beans, corn, and carrots combine to provide fiber, plant-based protein, vitamin A, carotenoids, antioxidants, calcium, magnesium, and potassium. That mix supports heart, eye, digestive, immune, and circulatory health.
Beyond nutrition, it’s a recipe you’ll want regularly because it’s fast, tasty, and inexpensive. If you’re feeling tired, uninspired, or short on time, this is one of those go-to meals that rescues the night without sacrificing flavor.
Is a black bean taco recipe expensive?
Not at all. These tacos save money and lift spirits. A double batch can feed a large family for under $10 when you use budget-friendly ingredients. Even a single or smaller batch can fall below $5 per meal, depending on portions and ingredient choices. Using homemade beans can further reduce cost while giving you control over sodium and texture, but canned beans work fine when you need speed.

I used home-cooked, frozen beans in my version, but canned beans are an excellent shortcut and still deliver great flavor. Either way, the filling is ready in about ten minutes.
Black Bean and Corn Tacos are a great option for any meal
These tacos are perfect for last-minute dinners, game-day spreads, or late-night snacks. They’re flavorful, quick to make, and healthy — a rare combination. You can also use the filling as a topping for baked potatoes for a vegetarian taco potato variation.

Cook’s Notes
- Home-cooked vs. canned beans: Both work. Homemade gives you texture control and lets you manage sodium. Canned beans save time—just rinse and drain them before using.
- Carrots: I prefer very finely shredded carrots so they blend smoothly into the filling. Use a food processor with a fine grating disc or a box grater, whichever you prefer.
- Salsa: Homemade salsa elevates the dish, but good store-bought salsa works too. If you have five minutes, a quick restaurant-style salsa brightens the tacos.
- Lettuce: Lining tortillas with lettuce leaves is optional but helpful for tidiness and adds a bit of crunch.

- Spray a stainless steel or other non-nonstick saucepan or small frying pan lightly with vegetable or olive oil cooking spray. Heat over medium until the pan is hot, then add the shredded carrots and chili powder. Stir frequently and cook until the carrots are tender, about 2 minutes (time varies with shred size).
- Add the salsa, black beans, and frozen corn. Stir, reduce heat to low, and cook until the beans and corn are heated through and the corn reaches your desired tenderness, about 5 minutes.
- If desired, line each warmed tortilla with a lettuce leaf. Divide the bean-and-corn mixture among the tortillas, top with cheese, and scatter fresh cilantro (or parsley) over each. Fold and serve warm or at room temperature.

- Fresh cilantro leaves (or parsley or shredded lettuce)
Optional
- 8 lettuce leaves
Instructions
- Spray a stainless steel or other non-nonstick saucepan or small frying pan lightly with cooking spray. Heat over medium, then add the carrots and chili powder. Stir often and cook until tender, about 2 minutes.
- Add the salsa, black beans, and frozen corn. Stir, reduce heat to low, and cook until heated through and corn is tender, about 5 minutes.
- If desired, line each tortilla with a lettuce leaf. Divide the filling among tortillas, top with cheese and fresh cilantro (or parsley or shredded lettuce). Fold and serve warm or at room temperature.
Notes
The original recipe suggests shredded lettuce and sour cream. I prefer fresh cilantro for brightness, but shredded lettuce or a dollop of sour cream (or Greek yogurt) are all good options.
