Ingredients
- 2-3 large tomatoes sliced ¼-inch thick
- ½ cup all purpose flour
- 1 teaspoon kosher salt
- ¾ teaspoon granulated garlic
- ¾ teaspoon black pepper
- ¾ teaspoon paprika or smoked paprika
- ½ teaspoon granulated onion
- 2 large eggs beaten
- ½ cup milk
- 1 cup plain panko bread crumbs
- 1 cup yellow cornmeal NOT self-rising

Instructions

In one bowl combine the flour, salt, granulated garlic, black pepper, paprika and granulated onion until evenly mixed. Set aside.

In a second bowl whisk the eggs and milk together until blended. Set aside.

In a third bowl toss together the panko and yellow cornmeal.

Arrange the stations in order: flour, egg/milk, then panko/cornmeal, with a clean plate nearby for the breaded slices.

Dredge each tomato slice lightly in the flour, tapping off excess. You want a thin coating so the tomato still shows through slightly.

Dip the floured slice into the egg mixture, let excess drip off, then press it into the panko and cornmeal so the crumbs adhere. Flip and repeat to coat both sides.
