Garlic Parmesan Stadium-Style Steak Fries

Few things satisfy like a giant plate of fries. I cycle through cravings for skinny fries, curly fries, and waffle fries, but lately steak fries have stolen my heart. Their hearty, potato-forward texture makes them ideal for dressing up—big, sturdy fries stand up beautifully to bold toppings.

This recipe is for serious garlic lovers. If you’re sensitive to garlic, reduce it to taste, but for me the garlic is the point.

The recipe idea came from a friend who raved about the garlic fries at AT&T Park in San Francisco and insisted I “don’t skimp on the garlic.” I’ve tried many variations since, and this version is my favorite.

Notes:

  • Cook the frozen steak fries according to the package directions. The fries I use call for baking at 450°F for 12 minutes, flipping once, then another 18 minutes—this produces a reliably crisp exterior and fluffy interior.
  • Avoid underbaking. Because the fries are tossed with warm oil and toppings while still hot, they should start out extra-crispy to prevent sogginess.
  • Grate Parmesan fresh. Pre-grated or shaker cheese won’t melt and cling the same way; freshly grated cheese gives the best texture and flavor.
  • Make extra—the fries disappear fast.
  • Worried about garlic breath? The parsley adds freshness, and sharing a plate around the table helps too.

Easy Garlic Parmesan stadium-style baked fries: crispy baked steak fries tossed with garlic-infused oil, freshly grated Parmesan, and chopped parsley. Serve hot and enjoy.

Ingredients

  • 1 bag frozen steak fries (about 28 ounces)
  • 2 tablespoons extra virgin olive oil
  • 1 large garlic clove (or 2 small), pressed or very finely minced
  • 1/2 cup plus 2 tablespoons freshly grated Parmesan, divided
  • 2 tablespoons fresh parsley leaves, finely minced
  • 1/2 teaspoon salt, or more to taste

Instructions

  1. Bake the steak fries according to the package directions, flipping halfway through so they brown and crisp evenly.
  2. While the fries bake, combine the olive oil and garlic in a small microwave-safe bowl. Cover and microwave on medium for 45 seconds, or until the oil is warm and the garlic is fragrant. Set aside.
  3. When the fries are crisp, transfer them immediately to a heat-safe bowl. Add 1/2 cup grated Parmesan, the minced parsley, salt, and the garlic-infused oil. Toss to coat the fries evenly. Transfer to a serving plate and sprinkle the remaining 2 tablespoons of Parmesan on top. Serve immediately.
