Spring is finally showing up — sunlight, a gentle breeze, and that fresh, earthy scent after winter. The change in weather has me reaching for bright, light recipes that still feel satisfying.
Today I’m sharing a cheerful, easy dessert: Lemon Cream No-Bake Mini-Cheesecakes. They come together almost instantly using Jell‑O instant lemon pudding and Philadelphia cream cheese. As a member of the Kraft Tastemaker program, I love how these familiar ingredients make a quick, crowd-pleasing treat.
These single-serve mini cheesecakes take just a few minutes to assemble and chill. I use the 1/3 less fat Philadelphia cream cheese as a lighter option, but you can pick whichever cream cheese and milk you prefer — skim, 1%, 2%, whole, or even a plant-based milk like almond, soy, rice, or coconut will work.
They’re perfect for a spring brunch, a picnic, or an easy dessert after dinner. Make a batch and you’ll have time left over for a walk in the park, playing outside with the kids, or just enjoying the warmer weather. Who doesn’t deserve a little lemony treat?
