Gyro Pita Bread

Gyros—warm pita stuffed with thin, spiced meat and tangy tzatziki—are Mediterranean comfort food at its best. While traditional gyro meat prepared as a loaf and slow-roasted is a labor of love best reserved for weekends, this recipe offers a smart shortcut that keeps the signature flavors intact.

Instead of grinding meat and slow-roasting, we’re using ground lamb blended with classic gyro spices, then pressing and searing it on a hot griddle against a pocketless pita. The result is a deeply browned crust and concentrated savory flavor that echoes a spit-roasted gyro in much less time.

Gyro Pita

Aside from the delicious results, this method saves money. A single gyro from a restaurant can cost $12–$20, and extras push the bill much higher for a family. With one pound of ground lamb, pantry spices, pitas, and simple tzatziki ingredients, you can feed four people for a small fraction of the cost without sacrificing flavor.

This recipe is about maximizing taste while minimizing effort—perfect for trimming your food budget and satisfying takeout cravings at home.

Lamb Pita

To recreate true gyro character at home, focus on three essentials: the spice blend, the caramelized crust, and the right pita. A classic gyro spice mix usually includes oregano, marjoram, rosemary, garlic powder, onion powder, salt, and pepper. Be generous with the dried herbs in this ground-lamb version and sear the meat until a deep brown crust forms—that’s where most of the intense savory flavor lives.

Choose pocketless, thicker “Greek-style” pitas rather than thin pocket breads; they’re chewier and hold up to the juices and fillings. And don’t skip tzatziki—the cool, garlicky-yogurt sauce is the perfect foil for rich lamb. Use full-fat plain Greek yogurt for a creamy texture, and squeeze the grated cucumber thoroughly so the sauce stays thick and not watery.

Fresh lemon juice and a bit of torn fresh dill add brightness and freshness; they lift the sauce and make the sandwich taste restaurant-quality.

Quick pan-fried gyro pitas featuring well-spiced, caramelized ground lamb and a creamy tzatziki—ready faster than takeout.

Equipment

  • Griddle, cast iron skillet, or stainless steel frying pan

Ingredients

For the Tzatziki:

  • 1 cup plain Greek yogurt (full-fat preferred)
  • 1/2 cup English cucumber, grated and squeezed dry
  • 1 clove garlic, peeled and minced
  • 1/2 teaspoon fresh lemon juice
  • Pinch of salt and pepper

For the Gyro Pita:

  • 1 pound ground lamb
  • 3 large cloves garlic, minced
  • 2 teaspoons granulated onion
  • 2 teaspoons dried oregano
  • 1 teaspoon dried marjoram (or extra oregano)
  • 1 teaspoon kosher salt
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon dried rosemary, finely crushed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon baking soda
  • Pinch of cayenne pepper (optional)
  • 6 pocketless pita breads

For Serving:

  • 1 red onion, thinly sliced
  • 1 tomato, thinly sliced
  • 1/2 cup crumbled feta cheese
  • Optional: torn lettuce, fresh parsley, mint, or dill

Instructions

  • Place a sheet pan with a cooling rack in an oven set to “keep warm.”

To Make the Tzatziki

  • In a medium bowl, combine Greek yogurt, grated cucumber (well drained), minced garlic, lemon juice, salt, and pepper. Stir, taste, adjust seasoning, then cover and refrigerate while you prepare the lamb.

To Make the Gyro Pitas

  • Line a half sheet pan with parchment and scatter the ground lamb across it. Sprinkle with minced garlic, granulated onion, oregano, marjoram, salt, pepper, rosemary, thyme, cumin, baking soda, and cayenne if using. Gently toss to combine—don’t overwork the meat.
  • Divide the mixture into six equal balls.
  • Preheat a griddle, cast-iron skillet, or stainless steel pan over medium-high heat. When drops of water sizzle and dance, it’s ready.
  • Working one ball at a time, place a meat ball in the pan, set a pita over it, and press down firmly with a heavy spatula until the meat is 1/4–1/2 inch thick. Cook about 3 minutes until a deep caramelized crust forms and the meat releases easily. Flip the crusted pita and cook the pita side about 3 minutes, reducing heat if the bread browns too quickly. For more well-done meat, add 1–2 minutes to the first side and cover while cooking the second side. Transfer finished pitas to the warm oven and repeat with the remaining portions.

To Assemble and Serve

  • Top each gyro pita with sliced red onion, tomato, crumbled feta, generous tzatziki, and torn lettuce, parsley, mint, or dill as desired. Serve immediately.

Storage and Reheating

  • Store un-garnished gyro pitas separated by parchment in a zipper bag in the refrigerator or freezer. Reheat on parchment in a 350°F oven or air fryer about 5 minutes, or until warmed through.
