I’ll be honest: this is not the most climate-friendly recipe to make during a heatwave, but sometimes cravings win. If you’re longing for something cheesy, bacony, bready and downright comforting, this Bacon Cheddar Bubble Bread answers the call.
Using a few simple ingredients—refrigerated bread dough, butter, shredded cheese, leftover bacon, and a sprinkle of fresh herbs—this come-together recipe takes minutes to assemble and about half an hour to bake. The result is tender, buttery pull-apart bread studded with crispy bacon bits and pockets of gooey melted cheese, finished with a golden, slightly crisp cheese cap.
To keep things easy in hot weather, you don’t have to invert the pan. Let the skillet or bundt pan cool until it’s comfortable to touch, then bring it to the table as-is. It’s perfect served alongside a big tossed salad and a pitcher of lemonade—simple, crowd-pleasing, and shareable.

Ingredients
- 1 pound refrigerated or thawed, previously frozen bread dough
- 1/2 cup butter, melted
- 1 1/2 cups finely shredded Cheddar (or a Cheddar/Monterey Jack blend), divided
- 1 cup crumbled leftover cooked bacon
- 2 tablespoons chopped fresh chives, parsley, or a combination
- 1 tablespoon minced onions (optional)
- Nonstick cooking spray or additional butter or oil for the pan
Instructions
- Preheat the oven to 350°F.
- Generously grease a 12-inch oven-safe skillet or a bundt pan with nonstick spray or butter.
- In a small bowl, mix the melted butter with 1 cup of the shredded cheese, the crumbled bacon, chives or parsley, and the minced onions if using. Set aside.
- Divide the bread dough into 32 pieces and place them in a large mixing bowl.
- Pour the butter mixture over the dough pieces and toss gently until the dough is evenly coated.
- Use your hands to arrange the coated dough pieces across the bottom of the greased pan in an even layer.
- Sprinkle the remaining shredded cheese over the top of the arranged dough.
- Bake for 25–30 minutes, until the top cheese is melted and crisped and the bread is golden brown.
- Either turn the bread out onto a serving plate or let the pan cool until it’s comfortable to touch before serving.
