Zesty Lemon-Lime Parfaits with Creamy Yogurt Layers

We are a dessert family. Most nights we like a little something after dinner — a sweet ending to the day, a tiny hug and a gentle goodnight. Our everyday desserts are simple: quick to assemble and made from ingredients you likely already have on hand.
One of my favorite quick desserts is the individual trifle — or is it a parfait? Whatever you call it, this layered treat always feels special. As a child I loved those pretty layers and festive look; as an adult I still do, and I appreciate how effortless it is to make.
It takes almost no time to assemble yet looks beautiful and has an uncanny ability to bring big smiles to the people you serve.
If you have ready-made Lemon Lime Curd (or any fruit curd), a slice of pound cake in the freezer, and a tub of COOL WHIP whipped topping, you can have a showstopping dessert in five minutes. It makes an ordinary night feel celebratory and is elegant enough for guests.

For the parfaits shown here I used push-pop molds and a pastry bag with a frosting tip to pipe the COOL WHIP, which is completely optional. If you prefer less fuss, layer the ingredients in juice glasses, small canning jars, or simply on a plate. There’s no single right way to build these — just make sure the layers are present and enjoy them with someone you love. Treats that are undemanding are the best.
What you add makes it! #coolwhipmoms

Whichever method you choose, you’ll be glad you made them.

Ingredients
Per Serving:
- 3 1/8- to 1/4-inch thick slices pound cake
- 3 tablespoons Lemon Lime Curd or store-bought fruit curd
- 4 tablespoons COOL WHIP whipped topping
Instructions
For Simple Servings:
-
Place one slice of pound cake on a serving plate. Spread with 1 tablespoon of curd and add 1 tablespoon of COOL WHIP. Repeat to create three layers, finishing with about 2 tablespoons of whipped topping on top.
For Special Occasions (Push-Pop Molds or Individual Parfaits):
-
Use a round cookie cutter slightly smaller than your mold or cup to cut three rounds from the pound cake slices. Place one round in the bottom, then layer 1 tablespoon lemon lime curd and 1 tablespoon COOL WHIP. Repeat, and finish by piping the remaining 2 tablespoons of whipped topping with a pastry bag and tip for a decorative touch.
