Homemade Fudgesicles & Frosties (Fruit- or Agave-Sweetened)

Icy cold, super-thick fudgy smoothies that surprise with their stealthy healthy ingredients. These Fudgesicle Frosties are luscious and creamy, and they double as fudgesicles when frozen in molds.

I’ve been testing a lot of blender recipes lately after getting a powerful new blender. One recipe on the Blendtec site caught my eye: Fudgesicle Frosty. I adapted it slightly and the result was so rich and chocolatey I practically ate it with a spoon.

These are thick enough to eat with a spoon. I served jars to my husband and watched his reaction as he tried to guess what was in them. When I revealed the ingredients—avocado, coconut milk, cocoa powder and dates—with no added sugar, he was surprised and delighted. He insisted they tasted just like a classic Frosty.

I increased the number of dates in the original recipe and left out the agave. If you prefer a sweeter treat, add a little agave or mild honey, but the dates provide plenty of sweetness on their own for our taste.

After we enjoyed a couple of servings, I poured the remainder into popsicle molds and froze them. The frozen fudgesicles were outstanding—creamy, chocolatey and satisfying. I’ve also frozen the mixture in half-pint jars to use as ice packs for picnic lunches; by lunchtime the jars have softened enough to spoon while keeping the rest of the picnic cool.

These Fudgesicle Frosties are a great way to sneak healthy fats and natural sweetness into a dessert the whole family will love. My kids, who normally avoid vegetables, happily eat these and think they’re having a special treat for breakfast. I haven’t told them what’s in them—let’s keep that between us.

Fudgesicle Frosties

These Frosties were tested in a high-powered blender. If you use a less robust blender, make sure the motor isn’t struggling; a food processor can be an alternative. This recipe is forgiving—use a slightly imperfect avocado if needed. Remember: this is a dessert, and its calories come from nutritious ingredients like avocado, coconut milk and dates. If you’re watching calories, serve a smaller portion.

Icy cold, super-thick, fudgy smoothies that use avocado and dates for creaminess and natural sweetness. These freeze beautifully into fudgesicles. Adapted from Blendtec blender recipes.

Ingredients

  • 1 can (about 13.5 oz) full-fat, unsweetened coconut milk
  • 12 pitted dates
  • 1/2 ripe avocado pitted and peeled
  • 1/3 cup unsweetened cocoa powder
  • 3 cups ice cubes

Optional:

  • 1/4 cup agave nectar or mild honey (for added sweetness)

Instructions

  • Add the coconut milk, dates, avocado and cocoa powder to the blender. Secure the lid and blend on high until smooth. Use a tamper if available; if not, stop the blender and stir with a spoon before blending again. Taste and, if desired, add agave or mild honey and blend to combine.
  • Add the ice and blend until very thick and smooth. Divide into glasses and serve with spoons.

To make fudgesicles:

  • Spoon the mixture into popsicle molds or small disposable cups. Insert sticks and freeze for at least 6 hours, or until solid.

To pack for a picnic:

  • Pour the blended mixture into half-pint jars, leaving about 1/2 inch of headspace for expansion. Freeze and use the frozen jars as ice packs; by lunchtime the contents should be soft enough to spoon while keeping the rest of the lunch chilled.
