Tex-Mex Rice Bowls for Budget-Friendly Weeknight Dinners

There’s a rare kind of meal that satisfies taste buds, placates picky eaters, fills you up for hours, takes minutes to assemble, is nutritious, and costs next to nothing. That meal is worth celebrating, and these Tex-Mex Rice Bowls fit the bill perfectly.

Think of this recipe as a flexible blueprint. Start with a bowl of rice—white, brown, or turmeric-spiked for a bright yellow color—and add the toppings you’d normally put on a taco. Shredded or ground beef, pork, or chicken work well. Add guacamole, refried beans or a spicy black bean and corn salad, a sprinkle of cheese, pickled jalapeños if you like heat, and finish with a fried egg and your favorite salsa.

This dish shines as a leftovers hero. Aside from the rice and a freshly fried egg, almost every component can come from leftovers. If you want to make fresh guacamole, go for it, but the bowls are just as good when assembled from what’s already in your fridge. It’s the culinary equivalent of Déjà Food—the satisfying moment when leftovers become something as good as or better than the original meal.

Tex-Mex Rice Bowls are also extremely adaptable for picky eaters. Start with plain rice and let everyone customize their own bowl. They can add or skip toppings to taste, and even swap salsa for ketchup if that keeps them at the table. The point is simplicity and flexibility.

Dinner doesn’t get simpler or more satisfying than bowls of hot rice topped with guacamole, spicy black bean and corn salad or refried beans, a fried egg, and salsa.

Ingredients

  • 2 cups uncooked long grain white rice
  • 1 teaspoon turmeric (optional)
  • 3 3/4–4 cups wateruse less for firmer rice, more for softer rice
  • a pinch of salt
  • 2 1/2 cups guacamole
  • 2 1/2 cups black bean and corn salad or refried beans
  • 6 large eggs
  • oil or butter for frying
  • 6 tablespoons salsa

Instructions

  • Bring the water and turmeric (if using) to a boil in a saucepan with a tight-fitting lid that holds at least 2 quarts.
  • When the water boils, add the rice and a pinch of salt, stir once with a fork, then replace the lid.
  • Reduce the heat to low and cook for 12–16 minutes, or until the water is absorbed. (See notes for tips.)
  • When the water is absorbed, fluff the rice with a fork and divide it among serving bowls.
  • Top each bowl with about 1/4 cup of guacamole and 1/4 cup of black bean salad or refried beans.
  • Heat a little oil or butter (1–3 teaspoons) in a frying pan over medium heat.
  • Crack two eggs into the pan and cook until the whites are set to your preference. (See notes for variations.)
  • Use a spatula to transfer one egg to each bowl of rice.
  • Spoon salsa over each egg and serve immediately.

Notes

Rice cooking tips: Avoid lifting the lid frequently—check only once or twice near the end and replace the lid quickly. Don’t stir the rice while it’s cooking; stirring breaks the grains and makes them gummy. Egg cooking tips: For sunny-side up, cook until the whites are set. If the edges set before the center, add a teaspoon of water and cover briefly to steam the top of the yolk while keeping it runny. For over-easy, cook until the whites are mostly set, flip once, and cook for up to one minute on the second side. For a fully set yolk, cook until done, flipping once during cooking.
