It’s a Pulled Pork Queso Party, and you’re all invited. As a mom of five boys—two teenagers and three who eat like teenagers—I’m often called on to produce large quantities of food on short notice. Teenage boys don’t nibble; they arrive in packs and eat everything in sight. When a group descends for a football game, you need easy, satisfying options ready or you’ll find an empty fridge and very hungry guests. Five boys. Five boys and a husband. And they bring friends. Fortunately, I keep a few pantry shortcuts to save the day: VELVEETA and RO*TEL. I always have both on hand because they’re the classic duo behind the Famous Queso Dip. While there are many variations, my favorite adds a generous helping of pulled pork for extra party power. Queso and pulled pork are a big win.
I often blend the RO*TEL Classic before adding it to the Velveeta cubes. This optional step yields a silky-smooth base before the cheese melts. At this point you could stop, serve the queso with chips, and please everyone—but I usually stir in pulled pork and heat through so the dip becomes a hearty main attraction.
Pro tip: set a small bowl of Pulled Pork Queso aside for yourself before you bring the big bowl to the table. While everyone crowds the buffet, you can enjoy your share from the best seat on the couch. Score!
