Homemade Spicy Taco Seasoning Mix for Bold Flavor

featured 17826

I don’t need to convince you that tacos belong in your life — tacos speak for themselves. What I do want to convince you of is this: make your own spicy taco seasoning to flavor the meat or fillings for your tacos. The main reason is control.

Cooking is for control enthusiasts, and there’s no shame in that. Making your own seasoning lets you know exactly what goes into your food — important for dietary needs, allergies, preferences, or simply curiosity. It takes just a couple of minutes to mix a batch of smoky, garlicky taco seasoning that will taste fresher and more complex than the foil packets on store shelves.

Another great benefit is versatility. Once you’ve prepared this seasoning, you can sprinkle it on popcorn, stir it into taco soup, mix it into taco-style sandwiches, or even season eggs. It’s a small pantry staple that transforms simple dishes into something memorable.

This mix is especially handy because it’s endlessly customizable. You can dial up the heat, emphasize smokiness, or cut sodium to suit your needs. It also stores well in an airtight jar so you’ll always have taco flavor on hand.

My family sprinkles this on everything from scrambled eggs to roasted vegetables. I also have a recipe coming soon for taco ranch dressing that pairs beautifully with this seasoning. If you love bold taco flavor, this mix will become a staple.

I prefer kosher salt for this blend because its grain size measures consistently and it lacks additives that can sometimes impart off or metallic notes. A note about the chili powders in this recipe: I use three different varieties to create depth and balance.

New Mexico chili powder brings an earthy, slightly sweet profile with a faint cherry-like note. Ancho chili powder is mild and fruity, different from New Mexico chili in its sweetness and character. Chipotle chili powder contributes smokiness and most of the heat — it adds complexity with subtle plum and chocolate undertones. Combining all three gives the mix a layered flavor profile that beats single-powder blends.

If you must omit one of the powders, you can skip the ancho and increase the New Mexico or chipotle powder by a tablespoon to keep the balance.

Use granulated garlic rather than garlic powder; it has a coarser texture similar to fine cornmeal, resists clumping, and measures more consistently. The same recommendation applies to granulated onion versus onion powder.

For seasoning taco meat, a good starting point is about 2 tablespoons of this seasoning per pound of ground meat. Increase the amount to taste if you want bolder flavor.
