One morning after a huge sleepover, with ten hungry kids in the house, I discovered we were out of maple syrup. I remembered my dad’s simple campfix: a brown sugar and water syrup finished with butter. I texted him, mixed up a double batch of pancake batter, and made the syrup while the griddle warmed up.

The recipe is straightforward: two parts brown sugar to one part water, heated until boiling, boiled briefly, then finished by stirring in small pats of butter until smooth and glossy. I poured the hot syrup into a small pitcher and watched the kids’ reaction—one finger dip and a delighted “mmmmm” told me it was a hit. Plates were filled and refilled until every pancake stack was properly sauced.

Brown Sugar Syrup

This is not maple syrup—maple has its own unique flavor. But Brown Sugar Syrup is richly buttery, caramel-like, thick and smooth, and perfectly at home on pancakes, waffles, or even ice cream and warm biscuits. Served warm, it adds a comforting, indulgent touch to breakfast.

Homemade Syrup

Use salted or unsalted butter; if you choose unsalted, add a pinch of salt at the end to balance the sweetness. A small splash (about 1/4 teaspoon) of vanilla or maple extract can be added for extra depth, though the syrup is delicious on its own.

Because it’s inexpensive and easy to make, feel free to be generous with servings. It’s a great pantry-friendly substitute when you’re low on maple syrup and makes an excellent topping for desserts and baked goods as well.

If you need breakfast pairings, this syrup is lovely with buttermilk pancakes, pumpkin pancakes, waffles, or alongside savory breakfast dishes. It stretches a modest maple supply and is a satisfying alternative for everyday use.

Can I Make Homemade Pancake Syrup Without Butter?

If you’re out of butter, you can use extra-virgin coconut oil. The texture and flavor will differ slightly, but the syrup will still be velvety and delicious.

Pancake Syrup

Stir the water and brown sugar together in a heavy-bottomed 2 to 2 1/2 quart saucepan with high sides. Place the pan over medium-high heat and stir until the sugar dissolves and the mixture comes to a boil. Reduce heat to medium and let it boil for 4 minutes.

After boiling, remove from high heat and gently drop in one pat of chilled butter at a time, stirring until each piece melts and integrates fully. Continue until all butter is incorporated, then remove the pan from the heat.

If you choose to add vanilla or maple extract, stir it in now—be careful, as it may bubble up. Let the syrup rest in the pan for five minutes, then pour into a heat-proof pitcher for immediate use or into a clean jar for storage. Serve warm or hot.

Store leftovers in a tightly sealed jar in the refrigerator for up to a month. To reheat, remove the lid and microwave in 15-second bursts, stirring between bursts, or warm the sealed jar in a pan of simmering water, using an oven mitt or tongs to lift and swirl until warm and pourable.
