These easy gluten-free meatballs are succulent and savory with a tender, perfect texture—you may judge all other meatballs by them. Serve them with spaghetti sauce, make Swedish meatballs, pile them into meatball subs, or offer them on toothpicks as an appetizer. Gluten is not missed here.
Whether you follow a gluten-free diet or not, these meatballs are crave-worthy. They’re simple to make, so consider doubling or tripling the batch and freezing extras for quick dinners later.

I don’t usually eat strictly gluten-free, but these are my favorite meatballs—gluten-free or not. They’re juicy, flavorful, and adaptable for many recipes.
Gluten Free Meatball Recipe
These meatballs are extremely versatile. The mixture works for a range of sizes and preparations, so you can adapt them to suit whatever dish you’re making.
One batch yields about 32 large meatballs (roughly 2 inches) or up to 92 small meatballs (about 3/4 inch). That’s plenty—plan on leftovers to freeze for future meals.
Here are some ways to use a freezer stash of fully cooked meatballs:
Serve them in a meatball pasta bake, on a cheeseburger salad, in a sweet-and-sour meatball stir-fry, tucked into a meatball sub, or warmed in marinara for a quick spaghetti and meatballs meal. Toss them in barbecue or sweet chili sauce and heat in a slow cooker for party appetizers or serve them over rice, noodles, or mashed potatoes.

Small meatballs are perfect in Italian wedding soup with greens and tiny noodles. Sub them for sausage in lasagna soup, toss them into tortellini vegetable soup for extra heartiness, or slice and add them to homemade pizza.
Gluten-Free Meatball Ingredients
These meatballs rely on simple, fresh ingredients that combine for great flavor and texture.
- Ground beef (or ground chicken, turkey, pork, or a meatloaf blend)
- Cooked quinoa
- Yellow onion
- Red bell pepper
- Fresh parsley
- Fresh garlic (or granulated garlic/garlic powder)
- Balsamic vinegar
- Eggs
- Italian seasoning
- Kosher or sea salt
- Black pepper

I usually make these with 85/15 ground beef for moisture and flavor, but ground turkey, chicken, or pork work well too. If you use a very lean meat, consider adding 1 tablespoon of extra-virgin olive oil for extra moisture.
Gluten Free Meatballs Recipe
The key is cooked quinoa in place of breadcrumbs. Quinoa keeps the meatballs light and juicy while remaining gluten-free.
Use a grated onion rather than powdered onion for moisture and better texture. The red bell pepper contributes moisture, flavor, and a bit of color; if you prefer, finely dice or puree it in a food processor to hide it from picky eaters.
Balsamic vinegar is important for depth and a touch of umami—don’t skip it. Fresh or dried herbs are both fine; if you substitute fresh for dried, use about three times the amount.

Italian Meatballs
Italian seasoning lends a classic flavor. If you want a more neutral base, omit it or swap in herbs that suit the cuisine you plan to serve the meatballs with. Add grated Parmesan to the mixture if desired.
GF Meatballs Equipment
- Large cast-iron skillet or stainless steel skillet or air fryer
- Chef knife
- Cutting board
- Mixing bowl
- Sturdy spoon or mix-and-chop tool
- Optional: disher/cookie scoop, instant-read thermometer

Light handling produces the best texture—mix gently with hands or a mix-and-chop tool and avoid overworking the meat. An instant-read thermometer helps: target 160ºF for beef or pork, and 165ºF for turkey or chicken, to ensure juicy, safely cooked meatballs.
Gluten Free Meatballs
To make the meatball mix:
Add all ingredients to a medium bowl and gently combine with your hands or a mix-and-chop tool. Divide and form into the desired number and size of meatballs, handling lightly.
To cook the meatballs in the oven:
Preheat the oven to 425ºF with a large oven-safe skillet on the top rack. When the oven is hot, remove the skillet, add the oil, and swirl to coat. Arrange meatballs in the hot skillet with space between them and return the pan to the oven. You may need multiple batches depending on skillet size.
Large meatballs (about 2 inches) take roughly 20 minutes to cook through; start checking smaller meatballs around 12 minutes.

To cook meatballs in an air fryer:
Preheat the air fryer to 400ºF for 5 minutes. Arrange meatballs in a single layer with space between them; you may need multiple batches. Cook at 400ºF for 8–10 minutes for small meatballs or 15–18 minutes for larger ones.
To freeze fully cooked leftovers, arrange meatballs on a parchment-lined baking sheet and freeze until solid, about 3 hours. Transfer to labeled freezer bags or airtight containers for up to 6 months.
Notes: Different meats have different safe internal temperatures. Beef and pork should reach 160ºF, while poultry should reach 165ºF.
