featured 13757

Crispy Baked Sweet Potato Fries are a perennial favorite on Foodie with Family for good reason. Many home cooks have used this recipe to make crispy, crunchy, flavorful sweet potato fries.

Quick tip: use an inexpensive oven thermometer to verify your oven’s calibration. If your oven runs hot or cool, adjust the temperature accordingly when baking the fries.

I’m unabashedly passionate about sweet potato fries. If they’re on a menu, I order them—no questions. But when I make fries at home, I’m picky: they must be properly crisp without added sweeteners. Sweet potatoes are already sweet; the best fries balance that natural sweetness with salt and spice, and most importantly, crispness. Soggy fries are a disappointment I avoid at all costs.

Sweet potatoes can be trickier than regular potatoes to get truly crispy in the oven. After testing many methods, inspecting ingredient lists from frozen brands, and making more than a dozen batches, I settled on a reliable method that yields consistently crispy baked sweet potato fries.

How to Make Perfect Crispy Oven Baked Sweet Potato Fries

Start by cutting your sweet potatoes into even matchsticks about 1/4-inch square. Consistent sizing ensures even cooking; slightly thinner is better than thicker if your knife skills vary. To steady the potato, slice a small piece off one side so it sits flat on the board, then cut lengthwise into 1/4-inch cards and slice those into matchsticks.

Soak the cut fries in cold water for at least an hour (or up to overnight). Soaking removes excess surface starch so the fries crisp on the outside while cooking through without burning. After soaking, drain, rinse, and pat them dry—dry, but not bone-dry.

How to Cook Sweet Potato Fries

Line two half-sheet pans with heavy-duty foil (dull side up) and lightly spritz with non-stick cooking spray. I tested many surfaces—regular foil, parchment, bare pans, stoneware, and silpats—and found heavy-duty foil gave the best results. Don’t skip this step; it makes cleanup easier and prevents sticking.

Working in batches, place about two handfuls of drained fries into a very large plastic bag. Add 2 teaspoons of starch (see Cook’s Notes) and trap as much air as possible in the bag so the fries can tumble. Shake vigorously to coat the fries with a whisper-thin layer of starch. Dump the fries into a bowl, add 1 tablespoon of a neutral, high-smoke-point oil (grapeseed, canola, sunflower, or peanut) and the optional chipotle powder, and toss with your hands. Arrange the fries on the prepared pans in a single layer, not touching. Repeat with the remaining fries and ingredients.

Do not add salt before cooking. Salting too early draws moisture and will make the fries limp. Wait until after baking to salt to taste.

Choose an oil with a high smoke point—grapeseed is my favorite for neutral flavor and tolerance of oven heat. Avoid olive oil here because it can smoke at the temperatures required to crisp the fries.

Baking Technique

Do not crowd the pan. Fries must be in a single layer with space around each piece so hot air can circulate and moisture can escape. If the pan is crowded, fries will steam and become soggy. Also avoid overloading the oven—bake one tray at a time if your oven is small.

Arrange the pans so one is in the top third and the other in the bottom third of the oven. Preheat the oven to 425°F. Bake for 15 minutes, then remove the pans and flip the fries using a thin metal spatula or fish turner. Flip carefully so fries stay in a single layer and not touching. Rotate the pans: move the top pan to the bottom and flip the front/back orientation to compensate for oven hot spots. Bake another 10–15 minutes until browned and cooked through.

When the fries are done, shut the oven off and prop the door open about halfway. Let the fries cool on the pan for at least 10 minutes—sweet potato fries crisp up even more as they cool slightly. After cooling, toss with salt to taste and serve.

Troubleshooting

If fries brown too quickly but aren’t cooked through, your oven may run hot. If they never crisp, your oven may run cool—use a simple oven thermometer to check and adjust. If fries turn out soggy despite following these steps, try baking one tray at a time; small ovens can trap too much moisture. Occasionally a poor-quality or overripe sweet potato will affect results.

Cook’s Notes

For the crispiest results, use a blend of powdered starches: cornstarch, brown rice starch, and tapioca starch in a 2:1:1 ratio. If you can’t source all three, cornstarch alone works fine. The goal is a very light coating—too much starch will taste starchy instead of allowing the potato flavor to shine.

I like a touch of heat and add 1/4 teaspoon (or more to taste) of ground chipotle powder before baking. This is optional but adds a smoky kick that contrasts nicely with the sweet potato.
