Avocado lovers, take notice! Ripe avocados are sliced, coated in a spiced panko breading, and shallow-fried until crisp outside and silky inside. Crispy, Creamy Avocado Fries are quick to make and deliver big flavor. Serve with your favorite dip—salsa, ketchup, or a smoky chipotle sauce—for an irresistible snack or appetizer.

When my husband tasted these fried avocado wedges, he closed his eyes and declared them heavenly. It’s easy to see why: a lightly fried exterior gives way to a luscious, creamy interior—basically avocado at its most indulgent. These aren’t deep-fried; they’re shallow-fried in a modest amount of oil, which yields a satisfyingly crunchy exterior without submerging the avocado in grease.
I asked him what he’d tell others about these fries. His succinct verdict: “Surprisingly delicious.” He sighed because he’s trying to watch calories, and these rich, crunchy bites aren’t exactly diet food. Still, they’re worth the occasional splurge.
Be warned: this recipe can be a bit messy to prepare, but a few simple strategies reduce cleanup. Lay down newspaper or parchment to catch stray crumbs, and set up a dipping station to keep the process organized. Once you’ve tried them, you’ll understand why I’m tempted to swap my long-standing birthday request for extra-crispy chicken fingers for these avocado fries instead.

Below are practical Cook’s Notes followed by a clear ingredient list and step-by-step instructions to help you produce perfectly crispy avocado fries every time.

Cook’s Notes
- Use just-ripe avocados rather than overripe ones. They hold up better during breading and frying.
- For a quick reminder on cutting avocados safely and neatly, use any trusted guide for halving and pitting an avocado.
- Minimize cleanup by protecting your counter with newspaper or parchment to catch crumbs, egg drips, and bits of avocado.
- Set up your breading station in this order (left-to-right for right-handers): plate or board of avocado wedges, seasoned flour, beaten eggs, panko crumbs, and an empty plate for the breaded wedges.
- Expect some clumps on your hands while breading—this actually helps when lowering the wedges into the hot oil and reduces splatter.
- These are shallow-fried, not deep-fried. Still, use caution when placing wedges in the oil and when flipping them.
- Salt generously right after frying. A little extra salt brightens the flavor and enhances the crust.
- Serve lime wedges on the side and let guests squeeze their own juice to avoid soggy crusts before serving.
- These fries retain much of their crispness at room temperature, making them a great party snack.
- To flip each wedge safely, use two forks—one on top and one underneath—to turn them in the pan. This reduces splattering compared with a spatula.
Crispy, Creamy Avocado Fries
Rebecca Lindamood
Ingredients
- 2 large just-ripe avocados, halved, pitted, and cut into wedges
- 1/2 cup all-purpose flour
- 1/2 teaspoon granulated garlic or garlic powder
- 1/2 teaspoon granulated onion or onion powder
- 1/2 teaspoon kosher salt
- 1/8 teaspoon cayenne pepper
- 2 large eggs beaten in a shallow dish
- 1 1/2 cups panko bread crumbs
- 1/4 inch of oil peanut, vegetable, or canola oil in a high-sided frying pan
Optional:
- chopped fresh cilantro for garnish
- salsa, ketchup, or a smoked paprika and chipotle dipping sauce
Instructions
-
In a shallow dish, whisk together the flour, garlic powder, onion powder, salt, and cayenne until evenly combined.
-
Heat a high-sided frying pan with about 1/4-inch of oil over medium heat. Prepare a breading station: seasoned flour, beaten eggs, and panko crumbs. Dredge each avocado wedge in the flour, shaking off excess. Dip into the beaten egg, letting excess drip off, then press into the panko until well coated. Place breaded wedges on a spare plate while you finish breading the rest.
-
Working one or two at a time, lower the breaded wedges gently into the hot oil. Do not overcrowd the pan. Fry until the underside is golden brown, about 2–3 minutes. Use two forks—one on top and one underneath—to carefully flip each wedge, then fry the second side for 1–2 minutes until golden. Transfer cooked wedges to a paper towel–lined plate to drain. Repeat with remaining wedges.
-
Serve hot, warm, or at room temperature with lime wedges and your choice of dipping sauce. Sprinkle with a little extra salt and garnish with chopped cilantro if desired.
