I’m thrilled to share a simple, crowd-pleasing appetizer and a special giveaway. These pulled pork baked potato skins are easy to make, perfect for game day, and guaranteed to satisfy the meat lovers at your party.
Start with leftover baked potatoes and shredded pulled pork — store-bought or homemade both work well. Cut the potatoes into quarters and scoop most of the flesh out, leaving about 1/8–1/4 inch of potato attached to the skins. Brush the scooped sides with olive oil, sprinkle with a little salt, and bake until the edges are golden and crisp. Fill each skin with pulled pork, add a spoonful of your favorite barbecue sauce, and top with shredded Monterey Jack or another melty cheese. Return to the oven just long enough to heat the pork and melt the cheese, and you’ll have a delicious, hand-held party hit.

Ingredients
- 6 leftover baked potatoes
- olive oil for brushing
- salt
- 2 cups leftover pulled pork (or store-bought)
- 3/4 cup your favorite barbecue sauce
Instructions
-
Preheat the oven to 425°F (220°C).
-
Cut each baked potato in half across the center, then cut each half lengthwise so you have quarters. Scoop out most of the potato flesh, leaving about 1/8–1/4 inch of potato attached to the skins. Brush the scooped surfaces generously with olive oil and sprinkle lightly with salt. Place the skins scooped-side up on a baking sheet and bake until the edges turn golden and begin to crisp.
-
Divide the pulled pork evenly among the potato shells, piling it into the wells. Drizzle a little barbecue sauce over each portion (about 1–2 teaspoons per skin, or more to taste). Return the pan to the oven until the pork and sauce are heated through, about 6 minutes.
-
Remove the pan, top each potato skin with shredded cheese (at least 1 tablespoon each), and bake just until the cheese melts and is hot. Transfer carefully to a serving plate and serve immediately.
