Classic Homemade Sloppy Joes Recipe for Juicy Sandwiches

This bacon cheeseburger–inspired homemade sloppy joe recipe was created with Cabot cheeses. It’s a pantry-friendly family favorite that’s simple to make and full of comforting flavor.

When I find extra ground beef in the freezer, sloppy joes are an easy go-to. My version leans more toward a bacon cheeseburger in a saucy tomato gravy than the classic canned style, and everyone in my family prefers it that way. It’s just as quick as opening a can but tastes far better.

Picture a rich tomato sauce loaded with melted cheese and crispy bacon, piled onto a toasted bun with tangy dill pickles. The result is a sloppy joe that tastes like a bacon cheeseburger with extra comfort-food appeal.

What kind of meat do I use for sloppy joes?

I prefer classic 80/20 ground beef for the best flavor; browning it in its own fat adds richness. You can, however, use nearly any ground meat you have on hand: 90–95% lean beef, ground turkey, ground chicken, or even ground lamb all work well. Brown the meat, drain any excess fat, and continue with the recipe.

Homemade sloppy joe sauce

This sauce is fast and uses pantry staples: ketchup, mustard, pickle juice, Worcestershire (or soy sauce), beef broth, cornstarch, salt, and pepper. Whisk everything together while the meat is browning, then pour the mixture into the pan after you drain the meat. Bring it to a boil, reduce heat and simmer until it thickens.

Finish the sauce by stirring in plenty of grated cheese so it melts into a creamy, cheesy gravy that clings to the meat.

What kind of cheese should I use?

Use any flavorful, good-melting cheeses you’d enjoy on a cheeseburger. I like a blend of Cabot Pepper Jack and Cabot Sharp Cheddar, but all-cheddar, pepper jack alone, or a mix with mozzarella will work. Match the quantity by weight to the recipe amount.

What rolls should I use?

Homemade hamburger buns or soft pretzel rolls are excellent choices, toasted or not. For store-bought buns, lightly butter and toast them before assembling the sloppy joes to add flavor and sturdiness.

Homemade Sloppy Joe Recipe

1. Add the sliced bacon to a Dutch oven or large skillet over medium heat. Cook, stirring, until the bacon is crisp. Transfer the bacon with a slotted spoon to a paper towel–lined plate.

2. Drain off all but about 2 tablespoons of bacon fat. Return the pan to medium heat, add the diced onion, sprinkle with kosher salt, and stir to coat. Cook, stirring constantly, about 3 minutes until the onions are tender and fragrant.

3. Add the ground beef on top of the onions and press it out into a patty. Let it cook undisturbed for 4 minutes, then begin to break it up with a spoon and continue cooking until well browned. Drain any excess fat and return the beef to the pan.

4. Whisk the beef broth and cornstarch until smooth. Stir in ketchup, mustard, pickle juice, Worcestershire (or soy sauce), and black pepper. Pour the sauce over the beef and stir to combine. Increase heat to medium-high to bring the sauce to a boil, then reduce to medium-low and simmer 2 minutes, until slightly thickened.

5. Remove the pan from the heat. Stir the grated cheese into the hot sauce until fully melted and incorporated. Fold in two-thirds of the crispy bacon, reserving the rest for garnish.

6. Serve the cheesy sloppy joe mixture over toasted rolls with reserved bacon, lettuce, tomato, sliced onion, and pickles if desired.
