Buttery toasted sourdough filled with savoury stir-fried kimchi, two kinds of gooey melted cheese, and a sprinkle of green onion elevates a lunch classic in this kimchi grilled cheese. The combination of crisp-tender, flavourful kimchi and molten cheese delivers a powerful hit of umami you won’t forget.

Kimchi Grilled Cheese
Cheese, heat, and crunch are a timeless trio. When you pair spicy, tangy kimchi with melting cheese and toasted sourdough, you get a sandwich that’s hard to resist—think pepper jack, jalapeño poppers, queso, or wings with blue cheese. The toasted sourdough gives the crunch, melted cheese supplies the comfort, and the kimchi adds garlicky, fermented depth and extra texture.
I used thin deli-style slices of mozzarella and cheddar. Mozzarella melts beautifully and stays mild enough for the kimchi to shine, while cheddar contributes a sharper, savory counterpoint. You can swap in other excellent melting cheeses—pepper jack, Monterey Jack, or provolone work well—but avoid pre-grated cheese for the best melt and texture.
This sandwich is perfect for cool evenings and comes together quickly. Make it soon—you’ll be warmed from the inside out.

Grilled Cheese with Kimchi
If you enjoy kimchi—store-bought or homemade—or even if you’re new to it, this sandwich is worth trying. Raw kimchi can have a bold aroma that some find intense, but cooking transforms that funk into deep, savory complexity. The scent becomes rich and nuanced, like onions and garlic caramelizing in butter, but amplified. Cooked kimchi’s flavour profile is irresistible and pairs exceptionally well with melted cheese.

Cooking with Kimchi
Raw kimchi is rich in probiotics, but heating it reduces those live cultures. Still, cooked kimchi retains many nutrients—calcium, iron, and vitamins A, C, and K—while remaining high in fiber and antioxidants and low in calories. When kimchi is cooked it also produces beneficial postbiotics, bioactive compounds formed during fermentation that can support immune and digestive health.
Beyond this grilled cheese, cooked kimchi is versatile. It complements soups, stews, pancakes, burgers, and more, adding umami depth and a pleasant tang. Stir-fried kimchi also works wonderfully as a topping for burgers or mixed into rice and noodles for added interest and flavor.

Kimchi Grilled Cheese
Ingredients
- 2 tablespoons salted butter, softened and divided
- 1/2 cup kimchi, finely chopped
- 1 teaspoon sugar
- 1/2 teaspoon fish sauce
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon granulated onion
- 2 slices mozzarella cheese, thin deli-style
- 2 slices cheddar cheese, thin deli-style
- 2 slices sourdough bread, about 1/2 inch thick each
- 2 green onions, thinly sliced
Instructions
- Melt 1/2 tablespoon butter in a skillet over medium-high heat. Add the chopped kimchi and cook, stirring, until it sizzles and is heated through. Stir in the sugar and fish sauce and continue cooking until most of the liquid has evaporated but the kimchi remains moist, about 1 minute. Transfer to a plate and wipe the skillet clean.
- Butter both sides of each bread slice. Return the skillet to medium-high heat and lay the bread in the pan, toasting the first side for about 1 minute.
- Reduce heat to low and flip the bread. On one slice, arrange the mozzarella, sprinkle with granulated garlic and onion, spread the cooked kimchi over the cheese, and scatter the green onion slices on top.
- Top with cheddar and place the second slice of bread, toasted side down. Press gently with a spatula, cover the pan, and cook for 1 minute. Remove the cover, flip the sandwich, and cook another minute or until the cheese is fully melted. Lift the lid briefly to let excess moisture evaporate, then transfer to a cutting board and slice in half. Serve immediately.
