Mini English Muffin Pizzas: Quick Homemade Pizza Bites

I’ve reached that phase of parenting where I seem to be running a nonstop taxi service for my children. I always thought “Mom’s Taxi” was just a cliché. Turns out it’s real.

It’s still a bit surreal to accept that I’m an adult with a bona fide teenager, another almost-teen, and three more kids following close behind. Somehow, two to three times each week I’m on the campus of our local private college for youth activities: classes, youth group, and the like. Early on, I realized—much to my surprise—that I was probably the oldest person in the student center and that I definitely didn’t look like the students. It was a shock.

That said, I keep going because those five little men in my life make everything worth it. I scoop up a kid for a quick hug or a playful noogie, load everyone into the van, and race home to toss together something that will make the whole crew happy before our next commitment.

When life is moving this fast, fancy food is the wrong answer. What you need most often is something reliable, comforting, and fast. It doesn’t have to be refined or pretty—in fact, messy and slightly rustic usually wins in the taste department. This is prime time for simple, satisfying meals you can assemble in minutes and pop into the oven.

Enter English Muffin Bread Pizzas. This is a quick riff on a childhood favorite—my mom’s English muffin pizzas—updated using English Muffin Bread. It works even better than split English muffins because the slightly thicker slices let a drizzle of olive oil soak through and crisp the bottom for a satisfying crunch.

Picture a crisp bottom crust, melty stretchy cheese, and your favorite pizza toppings, all ready in minutes. It’s comfort food at its most effortless: minimal prep, maximum reward. The process is straightforward—arrange the bread on a pan, drizzle with olive oil, toast briefly, spread on sauce, scatter cheese and toppings, then bake. The less perfect you are with the toppings, the better: stray cheese and bits that fall between slices bake into crunchy, snackable morsels.

These English Muffin Bread Pizzas are great as a quick family dinner with a simple salad, as game-day snacks, or as a warm, shareable appetizer. They’re easy to customize—pepperoni, cooked sausage, diced ham, pineapple, olives, onions—use whatever you like. The key is speed and ease, with delicious results.

English Muffin Bread Pizzas

A crispy bottom, gooey melted cheese and favorite pizza toppings come together in minutes. Serve with a salad for a quick family dinner, or prepare them as snacks for gatherings or game day. Simple, comforting, and quick.

Ingredients

  • 12 slices about 1/2-inch to 3/4-inch thick English Muffin Bread or 6 English muffins, split
  • 2 tablespoons extra virgin olive oil
  • 3/4 cup pizza sauce
  • 2-3 cups shredded mozzarella

Optional:

  • Diced cooked ham
  • Pepperoni
  • Thinly sliced onions
  • Pineapple tidbits (well drained)
  • Black or green olives
  • Italian sausage, cooked
  • …Whatever floats your pizza boat!

Instructions

  • Preheat the oven to 425°F (220°C). Line a rimmed baking sheet (or two) with heavy-duty foil or parchment paper.
  • Arrange the slices of English Muffin Bread or the split English muffins closely on the lined pan, leaving just a small gap between pieces. Drizzle the olive oil evenly over the slices. Bake for about 6–8 minutes, until the oil is bubbly and the bread edges turn golden. Lift a slice to check that the oil has soaked through and is bubbling on the bottom as well.
  • Remove the pan from the oven and place it on a heatproof surface. Spoon sauce onto each slice and spread to the edges. Scatter shredded mozzarella over the bread—don’t worry about neatness. A little cheese between slices that crisps on the pan is a welcome bonus. Add any additional toppings you like, then return the pan to the oven.
  • Bake for 10–18 minutes, depending on how browned you prefer the cheese. Let the pizzas cool 3–5 minutes on the pan, then use a spatula to transfer them to a platter. Scrape up any crispy browned bits from the pan and sprinkle them over the pizzas for extra crunch.
  • Serve hot, warm, or at room temperature.
