
Have you ever forced yourself into a pair of skinny jeans and wondered why it felt harder than before? That happened to me last month, and the struggle was real. Pulling them on required more effort than I expected, and taking them off was equally challenging. I needed a nap and a piece of chocolate to recover from the whole ordeal.
That experience made me accept something I’d been resisting: I can’t eat the way I did when I was much younger. Don’t get me wrong—I stay active and I work at staying fit. But a dinner of eight tacos or several slices of pizza has different consequences now. I’m not giving up the foods I love, but I have to be smarter about portions and choices.
With warmer weather approaching we’re busier, and I don’t always want to spend a long time in a hot kitchen. I still plan to enjoy indulgent dinners sometimes—my annual fried chicken birthday feast at the end of July is non-negotiable—but on many nights I want something fast, satisfying, and lighter.
Satisfy Pizza Cravings on Busy Nights the Healthy Way!
Enter Skinny Jeans Pizzas: a quick, healthy take on pizza using zucchini halves as the base. Slice zucchinis lengthwise, top them with pizza sauce, shredded mozzarella and Romano or Parmesan, sun-dried tomatoes, and a few pepperoni slices if you like. They’re completely customizable—add as much or as little cheese and toppings as you prefer.
Sun-dried tomatoes don’t need pre-soaking when placed next to the sauce on the zucchini; they’ll rehydrate as the sauce and zucchini release moisture during baking. Just be sure to cover them with a bit of cheese so they don’t scorch.

One pan, thirty minutes, super healthy, totally satisfying.
Important note: Eating eight zucchini halves as if they were pizza slices defeats the purpose—portion control still matters. But even if you indulge more than usual, these will generally have fewer calories than a comparable portion of traditional pizza. I’m not replacing regular pizza entirely—it’s still a favorite—I’m simply offering a waistline-friendly alternative that satisfies cravings on busy nights. Moderation is key.
…Except when it comes to dark chocolate.

Skinny Jeans Pizza {Zucchini Pizza}

Ingredients
- 3 medium sized zucchini about 8-inches long
- 1/4 cup plus 2 tablespoons pizza sauce (homemade or store-bought)
- 1/2 to 1 cup shredded mozzarella cheese
- 1/4 cup shredded Romano or Parmesan cheese
Optional Toppings:
- sun dried tomatoes homemade or purchased
- thin pepperoni slices
- minced fresh parsley and/or basil
Instructions

Preheat the oven to 425°F (220°C).

Line a rimmed baking sheet with foil and lightly spray with nonstick cooking spray, or use an unglazed stoneware rimmed baking sheet. Set aside.

Slice zucchinis in half lengthwise. Trim any protruding pieces so each half lies flat on the pan. Arrange the zucchini halves skin-side down on the prepared baking sheet.

Spoon about 1 tablespoon of pizza sauce onto each zucchini half and spread evenly. If using sun-dried tomatoes, place them on the sauce, saving a few to top later. Sprinkle the shredded cheeses evenly over the zucchini. If adding pepperoni, limit to about three thin slices per half.

Place the pan in the oven and immediately lower the temperature to 375°F (190°C). Bake for about 30 minutes, until the zucchini are tender but still sturdy enough to lift from the pan without falling apart.

Garnish with minced parsley and/or basil if desired, and serve warm.
