Creamy Dairy-Free Chocolate Ice Cream Recipe That Melts Minds

I have one of the best dairy-free ice cream recipes to share today—arguably one of the best homemade ice creams overall. Creamy, silky, and deeply chocolatey, this rich vegan ice cream is as easy to make as it is to enjoy.

I’ll admit: I used to dislike most dairy-free ice creams. Many are icy in texture, weak in flavor, and they lack the luxurious silkiness of traditional, cream-based ice cream. If you’ve followed this site for a while, you know I love a truly rich, creamy scoop.

This recipe solves those problems by using full-fat coconut milk for an exceptionally smooth, velvety base. Taste it without knowing it’s vegan and you likely wouldn’t guess.

My husband nearly fell out of his chair when I told him the bowl I handed him was dairy-free—he loved it. And thankfully, it’s one of the simplest ice creams to make. Unlike custard-based recipes, there’s no tempering of eggs or other fussy steps.

What Ingredients Make This Vegan Ice Cream Work

Coconut Milk

Full-fat, unsweetened canned coconut milk is the backbone of this recipe. It provides the fat and silkiness we want. Avoid lite coconut milk and the carton varieties sold for beverages; they simply don’t have enough fat to create a creamy texture. Also skip coconut cream—choose full-fat unsweetened canned coconut milk so you can control sweetness.

Dutch-Processed Cocoa Powder

For the deepest, most mellow chocolate flavor, use Dutch-processed cocoa. It dissolves more easily and gives a smoother chocolate profile than natural cocoa. If Dutch-processed isn’t available, natural cocoa will still work but the flavor and texture will be slightly different.

Light Agave or Golden Syrup

Light agave syrup lends a clean, mild sweetness and is a great option for those avoiding cane sugar. Lyle’s Golden Syrup is another excellent choice; it adds a subtle caramel note. Brown rice syrup is an alternative if you need something different, and corn syrup can work in a pinch though it tends to taste sweeter. Note: Golden syrup is made from cane sugar and is not suitable for those avoiding cane sugar entirely.

Cornstarch

Cornstarch is the secret to adding body and a silky mouthfeel. It helps thicken the base without turning it gummy—use the amount in the recipe for the best texture.

Chocolate Chunks (Optional)

If you like texture in your ice cream, stir in dark chocolate chunks at the end of churning. If you prefer a uniformly smooth scoop, omit them.

Vanilla and Coffee Extracts

Vanilla extract is essential; coffee extract is optional but recommended because it deepens and intensifies the chocolate flavor.

Dairy-Free Chocolate Ice Cream — Method

This comes together quickly. In a medium saucepan, whisk most of the coconut milk with the Dutch-processed cocoa powder, sweetener (agave or golden syrup), and a pinch of salt until smooth and evenly colored. In a separate small bowl, whisk the cornstarch into the reserved coconut milk until it dissolves, then whisk that mixture into the saucepan.

Warm the mixture over medium heat, whisking constantly, until it gently simmers and thickens—about 4 minutes. Avoid boiling. Remove from heat and stir in the vanilla extract and, if using, coffee extract.

Transfer the chilled base to a heat-proof container with a tight-fitting lid and refrigerate until thoroughly chilled—ideally overnight or at least 8 hours. Churn in your ice cream maker following the manufacturer’s instructions. If desired, fold in chocolate chunks near the end of churning.

You can enjoy the ice cream soft-set straight from the machine, or transfer it to a freezer-safe container and freeze until firm and scoopable. If it becomes too hard in the freezer, let it sit at room temperature for a few minutes to soften before scooping.
