Instant Pot Garlic Beef Stroganoff Recipe
I’m happy to partner with Cabot Cheese to share Instant Pot Garlic Beef Stroganoff: a creamy, garlicky mushroom-and-onion gravy that coats tender cubes of beef and wide egg noodles, all cooked together in the Instant Pot. This is one of the simplest, most crave-worthy comfort foods adapted for electric pressure cookers. All recipes, photos, and opinions are my own.

Beef Stroganoff is the ultimate comfort food, but traditionally it can be time-consuming. Using the Instant Pot dramatically shortens the timeline while delivering the same rich flavor and tender beef. This Instant Pot Garlic Beef Stroganoff is a weeknight lifesaver—rich, garlicky, and ready in a fraction of the time required for stove-top braising.
The pressure cooker transforms tougher cuts into tender bites, so you can use an economical cut without sacrificing texture. I prefer top round: it’s affordable, slices into neat cubes, and becomes tender under pressure. Instead of the thin strips used for stovetop recipes, cut the beef into 1-inch cubes. Cubes hold up better during pressure cooking and become uniformly tender in less time.

Pressure cooker options
This recipe is written for an Instant Pot electric pressure cooker, but a stove-top pressure cooker will also work. Any electric pressure cooker that allows manual high/low pressure selection and has a sauté or browning mode will be suitable.
What makes this stroganoff creamy?
Traditionally, sour cream provides the creaminess in beef stroganoff. In this version I use plain whole-milk Greek yogurt instead. It adds the tang and silky texture of sour cream while contributing extra protein. Avoid nonfat yogurt, which can curdle when heated.

Cook’s notes
- This recipe calls for about 2 pounds of beef. Use 1½ pounds for a saucier result or up to 2¼ pounds for a meatier dish.
- Try to keep the beef cubes uniform so they cook evenly; they don’t need to be perfect, but consistent size helps.
- Don’t skimp on the garlic—the recipe is meant to be garlicky.
- Use whole-milk Greek yogurt rather than nonfat to prevent curdling and preserve a rich texture.
- Wide egg noodles are specified because thinner noodles will become mushy during pressure cooking.
- This stroganoff is delicious served over other starches—try it over a baked potato or mashed potatoes for variety.
Tools
- Instant Pot or comparable electric pressure cooker (or a stove-top pressure cooker)
- Cutting board and chef’s knife
- Slotted spoon or sturdy cooking spoon
If you enjoy Instant Pot recipes, consider trying other pressure-cooker mains and sides to pair with this stroganoff, such as simple rice, braised meats, or roasted vegetables.

Instant Pot Garlic Beef Stroganoff
Rebecca Lindamood
Ingredients
- 2 tablespoons olive oil separated
- 2 pounds beef top round sliced into 1-inch cubes
- 2 1/4 teaspoons kosher salt divided
- 3/4 teaspoon black pepper
- 2 tablespoons butter
- 8 ounces whole small white button mushrooms or sliced cremini or white mushrooms
- 1 onion peeled and diced
- 6 cloves garlic peeled and minced
- 3 tablespoons all-purpose flour
- 3 cups low sodium beef stock
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Dijon mustard
- 3/4 teaspoon dried thyme
- 12 ounces dried extra wide egg noodles
- 1 cup plain whole milk Greek yogurt not nonfat
- fresh parsley for garnish
Instructions
-
Drizzle half of the olive oil into the Instant Pot. Set to SAUTE on high. Season the beef cubes with 1 1/2 teaspoons of the salt and the black pepper, tossing to coat.
When the oil shimmers, add half the beef cubes and brown on all sides. Transfer to a bowl. Add the remaining oil and brown the second batch the same way, then add to the bowl.
Melt the butter in the pot, then add mushrooms, diced onion, minced garlic, and the remaining 3/4 teaspoon salt. Cook about 4 minutes until the onions soften but do not brown.
Sprinkle the flour over the vegetables and stir until evenly distributed. Cook 1–2 minutes, stirring, until a thin film forms on the bottom of the pot.
Pour in 1 cup of beef stock and scrape up any browned bits from the bottom. Add the remaining stock, Worcestershire sauce, Dijon mustard, and thyme. Return the browned beef to the pot.
Lock the lid and set the valve to SEAL. Press MANUAL and cook on HIGH pressure for 12 minutes. Quick-release the pressure according to the manufacturer’s instructions.
Stir in the egg noodles, reseal the lid, and cook on HIGH pressure for 5 minutes. Quick-release the pressure, then let the pot rest for 5 minutes with the lid ajar.
Stir in the Greek yogurt until the sauce is smooth. Garnish with chopped fresh parsley and serve immediately.
