Creamy 3-Ingredient Strawberry Ice Cream Recipe

featured 16526

Ice cream has a special way of brightening a day, and this 3 Ingredient Strawberry Ice Cream is a standout. With just three components—heavy cream, frozen sweetened sliced strawberries, and a touch of balsamic vinegar—it delivers intensely strawberry-forward flavor and a creamy texture that’s nearly scoopable right after churning.

What sets this recipe apart is its simplicity and the fruit-forward approach. Using a full container of frozen sweetened strawberries gives the base more body and flavor than typical recipes that rely mostly on cream and added sugar. The natural sweetness in the thawed strawberries provides the bulk of the sweetness, while the balsamic vinegar brightens and enhances the berry aroma, producing a richer, more complex strawberry taste.

The method is fast and forgiving: blend the thawed strawberries and their juices, add heavy cream and a teaspoon of balsamic, pulse briefly to combine, then pour into your ice cream maker and churn. Because the mixture contains a relatively high proportion of fruit, the churned result is denser than many homemade ice creams and approaches a hard-scoop consistency out of the machine—perfect for indulging immediately.

If you prefer a smooth texture, puree the berries completely. If you like bits of fruit throughout, pulse the berries so you retain small pieces. Be careful not to overblend once you add the heavy cream: blend only until fully incorporated (about 30 seconds) so the cream doesn’t turn to whipped cream.

Freshly churned, this ice cream is aromatic, bright, and wonderfully creamy—a blend of sherbet-like intensity and classic ice cream richness. It’s become a go-to for instant gratification: quick to prepare, intensely strawberry, and delightfully satisfying. When stored in the freezer, it firms up more than the freshly churned version; let it sit at room temperature for about 10 minutes before scooping if you freeze it for later.

Cook’s Notes

  • Use the frozen sliced strawberries that come in a sweetened tub. The sugar packed with the strawberries supplies the sweetness for the ice cream.
  • A splash of balsamic vinegar enhances the fragrance and perceived sweetness of strawberries. It may sound unexpected, but it deepens the berry flavor without making the ice cream taste vinegary.
  • For a smooth texture, puree the strawberries completely before adding the heavy cream. If you prefer more texture, pulse the berries to keep small pieces intact.
  • Blend the heavy cream only briefly—about 30 seconds—to incorporate it. You don’t want to whip the cream.
  • This ice cream is best enjoyed straight from the churner. If you freeze leftovers, store them tightly in an airtight container for up to a week. Remove from the freezer and let sit about 10 minutes before scooping.
