My husband has two perennial birthday requests. The first: a mixing bowl full of chewy, crispy bacon with permission to eat as much or as little as he wants. The second: strawberry shortcake for dessert.

The bacon habit? When I cook it, every strip and crumb serves a purpose. It goes into dishes, it tops things, and it’s rarely treated as frivolous. He just wants a bowl of bacon and freedom. I understand.

Strawberry shortcake, though — that’s pure love. He adores it, especially served on biscuits like a true southerner. As a food blogger, I couldn’t resist experimenting.

“Oh honey, this looks great. Hey—what’s that green stuff on my shortcake?” he asked, suspicious.

“It’s decorative,” I cooed. “Isn’t it pretty?”

He took a bite and chewed thoughtfully. “This is great. What’s making these strawberries taste so… strawberry-y? I can’t stop eating this!”

“Basil! And balsamic vinegar!” I crowed, doing a small victory dance before hugging him. He wasn’t upset—I’m not heartless.

He was right: basil and strawberries are a wonderful pairing. Basil’s aromatic notes lift the strawberry’s fragrance, while balsamic vinegar amplifies the fruit’s sweetness and depth. If you’re skeptical, try a tiny experiment: hull and slice a single strawberry, add 1/4 teaspoon balsamic vinegar, 1/4 teaspoon sugar, and a thin strip of fresh basil. Toss, let rest for 10 minutes, then taste. You’ll be surprised by the intensity of the strawberry flavor.

Cook’s Notes:

  • Use either homemade or store-bought pound cake. Homemade will usually be best, but a good bakery loaf works well too. Slice it into 1/2-inch slabs and use a 3-inch round cutter to make neat circles.
  • Fresh strawberries are essential for this recipe. Frozen berries have their place, but take advantage of fresh berries when they’re in season for the brightest flavor.
  • Do not skip the balsamic vinegar. You don’t need an aged, expensive bottle—just a balsamic that tastes pleasant straight from the jar. If it makes you puckery or odd-faced, try a different bottle.
  • I don’t sweeten the whipped cream here because the berries and pound cake offer plenty of sweetness. If you prefer a sweeter finish, add a little sugar to the cream.

Ingredients

  • 1 loaf pound cake, homemade or purchased cut into 1/2-inch thick slabs, then cut into 3-inch diameter circles
  • 1 pint whipping cream whipped to firm peaks
  • 1 quart strawberries hulled and sliced
  • 1 tablespoon plus 1 1/2 teaspoons sugar
  • 1 tablespoon balsamic vinegar
  • 6-8 leaves fresh basil rolled up and thinly sliced

Instructions

  • Gently toss the sliced strawberries with the sugar and balsamic vinegar in a mixing bowl. Let rest at room temperature for 10 minutes, then stir in all but about a tablespoon of the thinly sliced basil. This can be prepared up to 4 hours ahead, covered and refrigerated.

To Plate:

  • Place one pound cake round on a plate and spread a tablespoon of whipped cream on top. Arrange several strawberry slices over the cream, add about 2 tablespoons more whipped cream, top with another pound cake round, and repeat the layers. Finish with a generous dollop of whipped cream and the reserved basil strips. Serve immediately.
