Spinach Omelet Grilled Cheese Sandwich Recipe

This recipe was developed in partnership with Land O’Lakes, Inc. I’m proud to work with them to help fight hunger through their Pin a Meal: Give a Meal program with Feeding America. Each pin from this post will help provide a meal for families in need. The recipe concept and opinions are my own.

My husband is one of those endlessly inventive people—nicknames like The Nutty Professor and MacGyver didn’t come from nowhere. When I was planning something for National Grilled Cheese Month and he suggested, “Why don’t you do an omelet grilled cheese?” I knew I had to try it.

Omelet meets grilled cheese—what could be better? The first bite confirmed it: toasted whole-grain bread holding melted cheese that blankets a tender, flexible omelet. That omelet wraps garlicky wilted spinach, diced ham, and extra molten cheese. It’s comforting, satisfying, and just the kind of delicious improvisation I love. I’m grateful for his suggestion—and for the recipe that emerged.

Cook’s Notes

  • You can use the same skillet for sautéing the spinach, making the omelet, and then toasting the sandwich. Wipe the pan clean after the spinach step and continue—no need to use multiple pans.
  • To produce a pliable omelet that wraps the filling, stop cooking while the top still looks slightly moist. The omelet should be set on the bottom but flexible on top so it can fold without cracking; residual heat will finish cooking it while the sandwich toasts.
  • The technique for the omelet is simple: use a nonstick pan and a flexible heat-safe spatula. Gently lift the cooked edges and tilt the pan so uncooked egg flows underneath. Think like soft scrambling but stop before the eggs are fully dry so the omelet stays cohesive.
  • Squeeze excess liquid from the cooked spinach before adding it to the omelet. You don’t need to dry it completely—just remove enough moisture so the sandwich won’t be soggy when cut.

Ingredients

  • 1 teaspoon canola oil
  • 3 cups raw baby spinach
  • 2 cloves garlic peeled and minced or pressed
  • 2 eggs
  • 1 tablespoon milk
  • 1 tablespoon diced cooked ham
  • 4 slices LAND O LAKES® Deli American Cheese
  • 2 slices hearty whole grain sandwich bread
  • 2 tablespoons unsalted butter divided
  • kosher salt
  • freshly ground black pepper

Instructions

  • Heat a nonstick skillet over medium-high heat. Add the canola oil and swirl to coat. Add the baby spinach with a pinch of kosher salt and toss with tongs. Add the minced garlic and cook briefly until the spinach wilts and the garlic is fragrant. Transfer the spinach to a plate and wipe the pan clean. Lay one slice of LAND O LAKES® Deli American Cheese on one slice of the bread on a heat-proof surface.
  • Beat the eggs with the milk and a pinch of kosher salt until smooth and uniform in color. Reduce the stovetop heat to low and melt 1 tablespoon of the butter in the pan. Pour in the eggs and gently stir, lifting cooked edges with a flexible spatula and tilting the pan so uncooked egg flows underneath. Cook until the eggs are mostly set but still slightly moist on top. Place the wilted spinach in the center third of the omelet, sprinkle the chopped ham over it, and top with one slice of the deli American cheese. Fold the top and bottom thirds of the omelet over the filling and slide the omelet onto the cheese-covered bread slice. Add the remaining two slices of cheese on top of the omelet and place the second slice of bread on top.
  • Melt 1/2 tablespoon of the remaining butter in the skillet over medium-low heat. Spread the final 1/2 tablespoon of butter over the top slice of bread. Carefully transfer the sandwich to the hot pan, cooking until the bottom is golden brown. Hold the sandwich together, slide a spatula underneath, and flip gently to brown the other side. Add 1/2 teaspoon of water to the pan, cover tightly, and raise the heat to high for a short burst of steam to fully melt the cheese. Remove the lid and cook another minute to recrisp the bread. Transfer to a cutting board and slice in half. Serve immediately while piping hot.
