Spicy Bacon Cheddar Pasta Salad

Tender ditalini, crunchy bell pepper and cucumber, crispy bacon, tiny cubes of Cheddar and pepper jack, jalapeño and chives in a creamy ranch dressing — a summer-ready pasta salad full of texture and flavor.

Ingredients

  

  • 1 pound ditalini pasta
  • 8 slices bacon fried until crisp and crumbled
  • 1 seedless cucumber diced
  • 1/2 red or orange bell pepper finely diced
  • 1/2 yellow bell pepper finely diced
  • 1/2 red onion finely diced
  • 4 ounces Sharp Cheddar finely diced
  • 4 ounces pepper jack finely diced
  • 1 jalapeño pepper stem and seeds removed, finely diced
  • 1 cup cherry tomatoes quartered
  • 2 tablespoons chopped chives
  • 2/3 cup ranch dressing reserve 1/3 cup

Instructions

 

Cook the ditalini according to package directions until al dente. Drain and rinse the pasta thoroughly with cold water. In a large bowl, combine the cooled pasta with the bacon, cucumber, bell peppers, red onion, cheeses, jalapeño, cherry tomatoes, and chives. Toss with 2/3 cup ranch dressing, reserving 1/3 cup. Refrigerate for at least one hour to allow flavors to meld. Before serving, add the reserved ranch dressing if the salad needs more creaminess.
