Nicoise Tuna Sandwich: Classic French-Style Tuna Melt Recipe

This tuna sandwich is far from ordinary. A crusty baguette hollowed out and packed with albacore tuna, sliced hard‑boiled eggs, briny Niçoise olives, anchovy fillets, thin bell pepper strips, pickled onions, and a drizzle of oil creates a sandwich worthy of the French countryside. Bon appétit!

I spent a school year in France and still think about the food I tasted there. The countryside, the people, and the markets left an impression, and the regional specialties—from crusty bread to pungent cheeses to expertly prepared fish—are unforgettable. While I was vegetarian for part of my stay and missed some of the area’s famed sausages, I more than made up for it with pastries, cheese, and the many fish dishes that defined the region.

The Niçoise‑inspired tuna sandwich below channels those memories. It’s built on chewy, flavorful bread and combines meaty albacore tuna with crisp tender pepper strips, tart pickled onions, tiny briny Niçoise olives, and a bit of salty anchovy. Chopped hard‑boiled eggs and a drizzle of olive oil finish the assembly. Wrapped tightly and chilled for several hours, it develops a compact, melded texture that’s perfect for picnics or a relaxed lunch—ideal for reclining under a tree with a good book or pedaling along a country lane before enjoying a satisfying bite.

Why this works

The sandwich relies on contrasting textures and balanced seasoning. Anchovies contribute a background savory saltiness—like the anchovies in a Caesar dressing—that disappears into the mix while boosting overall flavor. Niçoise olives bring a focused brininess, pickled onions add brightness, and the bell peppers provide sweet crunch. Chilling the wrapped sandwich presses the layers together so each bite is well composed.

Cook’s Notes:

  • If you’re hesitant about anchovies, try them anyway: mashed into the sandwich they melt into the overall flavor and add essential savory depth.
  • If Niçoise olives aren’t available, oil‑cured or Kalamata olives are a reasonable substitute.
  • Oil‑packed albacore gives the richest result, but water‑packed tuna works in a pinch.
  • Use a mix of small multi‑colored mini bell peppers when possible; otherwise slice a larger red, orange, or yellow pepper into thin strips.
  • Quick‑pickled red onions work especially well for brightness and acidity.

Ingredients

  • 1 batard about 12 inches long
  • 1 tablespoon coarse dijon mustard
  • 6 anchovy filets coarsely chopped, plus 1 tablespoon of the oil from the anchovies OR 1 tablespoon olive oil and 1/2 teaspoon coarse salt
  • 1 can albacore tuna drained
  • 1/4-1/3 cup Niçoise olives pitted and lightly smashed
  • 1/4 cup cherry tomatoes halved or quartered
  • 3 tablespoons pickled onion rings or 1 tablespoon chopped raw red onion
  • 3 mini bell peppers, cut into thin strips
  • 2 hard boiled eggs peeled and sliced into rounds
  • cracked or freshly ground coarse black pepper

Instructions

  • Slice the loaf lengthwise. Hollow out the center of both halves, leaving a 1/2 to 3/4 inch shell so there’s room for filling.
  • Spread chopped anchovies (or anchovy oil) across both halves. Scatter broken albacore over the bottom half, season with pepper, then layer the smashed olives, bell pepper strips, and cherry tomatoes. Add pickled onions. Press the sliced hard‑boiled eggs into the top half, breaking them slightly. Drizzle the anchovy or olive oil over the eggs and place the top half over the filling.
  • Wrap the sandwich tightly in plastic wrap. Use a length that wraps the sandwich twice with a couple inches of overhang; overlap sheets if needed. Press as you roll, twist the ends firmly, and refrigerate for at least 4 hours, preferably overnight, so the flavors meld and the sandwich firms up.
  • Unwrap and slice the sandwich in half to serve as a main, or cut into smaller slices to serve as an appetizer.
