Kielbasa, Apple & Onion Stir-Fry with Mini Puff Pancakes

Autumn is an excellent season for apple lovers in Western New York. Although this year’s crop was affected by a late frost and inconsistent weather, apples are still abundant at roadside stands, farmers’ markets, and grocery stores. October apples, crisp and bright, are hard to beat.

Fresh apples are wonderful on their own or dipped in caramel, but one fall combination deserves more attention: fried apples and onions with kielbasa. I first encountered this pairing as a child while reading Farmer Boy by Laura Ingalls Wilder, where Almanzo’s mother fried apples and onions in bacon grease. The description stuck with me, and when my mom made it at home I discovered how delicious the dish really is.

When apples are at their peak—firm and crisp—they stand up well to a hot pan. In my kitchen I often brown cubed, garlicky kielbasa first, then add the apples and onions. That simple step turns a classic side into a satisfying main course. The aroma while it cooks is irresistible: browned kielbasa, sweet onions, and caramelizing apples draw everyone into the kitchen looking for a taste.

The contrast of slightly crisp, browned kielbasa with tender-sweet apples and melting onions is irresistible. The dish balances salty, sweet, and savory notes—simple but deeply satisfying.

There are several serving options. Our favorite is to make mini puff pancakes (based on a Finnish pannukakku batter poured into a well-greased muffin tin). The light, custardy pancakes puff in the oven and sink slightly as they cool, creating a perfect little nest for the warm stir-fry.

The mini puff pancakes soak up the flavorful pan drippings and hold the browned bits of sausage and tender apple and onion pieces perfectly. If you prefer, the stir-fry is equally delicious spooned over hot egg noodles or steamed rice. Whichever way you serve it, this dish is a comforting, savory-sweet reminder that fall flavors are something to celebrate. Enjoy the season!

Well-seasoned, garlicky kielbasa pairs with crisp tart apples and sweet onions in this fall stir-fry. Serve over hot egg noodles, rice, or on mini puff pancakes for a comforting meal.

Ingredients

For the Mini Puff Pancakes:

  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • a pinch each of salt and sugar
  • non-stick cooking spray

For the Kielbasa, Apple and Onion Stir-Fry:

  • 14 to 16 ounces kielbasa or smoked beef sausage cut into 1/2-inch cubes
  • 4 large tart apples firm varieties for cooking such as Cortland, Spy, Gala, or Granny Smith
  • 2 large cooking onions ends trimmed and peeled
  • 2 tablespoons butter
  • Pinch salt
  • freshly ground black pepper to taste
  • Optional: 1 tablespoon maple syrup

Instructions

To Make the Mini Puff Pancakes:

  • Preheat the oven to 400°F (200°C). Generously spray a 12-cup muffin pan with non-stick cooking spray.
  • Combine the eggs, flour, milk, and pinches of salt and sugar in a blender and blend on high for about 30 seconds, scraping the sides once. Alternatively, whisk the ingredients until smooth in a mixing bowl.
  • Divide the batter evenly among the muffin cups. Bake 20–30 minutes until the pancakes are very puffy and golden brown. Let cool on a rack for 3 minutes before removing; use a butterknife to loosen any that stick.

To Make the Kielbasa, Apple and Onion Stir-Fry:

  • Heat a skillet over medium. Add cubed kielbasa and let it sit for about 1 minute to develop color, then stir or toss until the pieces are evenly browned and some fat has rendered, about 3–5 minutes. Transfer the sausage to a plate, leaving about 1 tablespoon of fat in the pan.
  • Cut the onions: halve end-to-end, quarter each half, and then halve each quarter. Set aside.
  • Peel, core, and quarter the apples, then halve each quarter so the pieces are bite-sized.
  • Return the pan to medium-high heat. Add butter to the drippings and let it melt, then add the onions and cook undisturbed for about 3 minutes. Add the apples, toss to coat, and continue to cook, stirring occasionally, until the apples are tender but still hold their shape, about 3–5 minutes. Season with black pepper and a pinch of salt. If using, drizzle the maple syrup over the mixture and toss to combine.
  • Serve the hot stir-fry over mini puff pancakes, egg noodles, or rice.
