Habanero Pulled Pork Cornbread Stacks: Spicy Southern Sliders

With a schedule that practically demands spreadsheets, having ready-to-use freezer meals is essential. I’ve talked about freezer cooking before: rather than freezing whole casseroles, I prefer to freeze fully cooked components that can be mixed and matched. That approach keeps dinners interesting and avoids the feeling of eating the same thing over and over. Two favorites in our house are Slow Cooker Cola Pulled Pork and Habanero Buttermilk Cornbread. Both are delicious on their own, but when combined they become the start of many inventive meals—pulled pork on pizza, in sandwiches, rice bowls or soups; cornbread alongside chili, in a soup, or used in stuffing.

When those stars align, you get a dish that looks elegant yet comes together quickly: Pulled Pork Habanero Cornbread Stacks. Spicy cornbread rounds are stacked with pulled pork, finished with sautéed collard greens and a griddled peach or apple. It’s an impressive crowd-pleaser for parties, game day, or a cozy dinner at home. The result is both attractive and satisfying—hearty, flavorful, and likely to win over even the staunchest meat-and-potatoes fans.

Cooking Notes:

  • If you’re feeding sensitive palates, omit the habanero from the cornbread; a milder version still pairs beautifully with the pork, collards, and fruit.
  • Peaches are my first choice for the topping, but in winter or when ripe peaches aren’t available, firm tart apples work wonderfully. Either fruit is delicious; keep the skin on when slicing to help the pieces hold their shape when griddled.

  • 1/2 cup flour
  • 1 1/2 cups yellow cornmeal not self-rising
  • 3/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 1/2 tablespoons sugar
  • 1 teaspoon salt
  • 2 eggs beaten
  • 3 tablespoons melted butter
  • 1 1/4 cups buttermilk
  • 1 habanero pepper stem and seeds removed, finely minced
  • bacon grease or butter for the pan

For the Pulled Pork Habanero Cornbread Stacks:

  • 1 batch Habanero Cornbread
  • 3 cups pulled pork Slow-Cooker Cola Pulled Pork or Slow Cooker Cuban Pork are good options
  • 2 cups thinly sliced fresh collard greens ribs removed
  • 2 teaspoons olive oil
  • hearty pinch of salt
  • 4 large wedges or slices of peach or apple leave the peel intact
  • raw sugar for sprinkling
  • 2 tablespoons butter

Instructions

To Make the Habanero Cornbread:

  • Preheat the oven to 425°F (220°C).
  • Whisk the dry ingredients together in a large bowl. In a separate bowl, combine the wet ingredients and the minced habanero. Pour the wet mixture into the dry and gently whisk until no dry pockets of cornmeal remain.
  • Grease an 8- or 10-inch cast-iron skillet (or an 8-inch square or round pan) with bacon grease or butter. Pour in the batter and bake about 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Serve warm for the best flavor.
  • Store leftovers wrapped at room temperature for up to 48 hours; reheat slightly before serving for best results.

To Assemble the Pulled Pork Habanero Cornbread Stacks:

  • Use a 3-inch round cutter to punch out six cornbread rounds. Reserve the remaining cornbread for stuffing or croutons.
  • Cover the rounds lightly while you prepare the pork, collards and fruit.
  • Heat a heavy pan over medium. Add pulled pork with 1 tablespoon water, cover, and steam for 2 minutes. Uncover, flip the pork, cover and heat another minute until warmed through. Transfer pork to a bowl and raise heat to medium-high.
  • Add 2 teaspoons olive oil to the pan and stir-fry the collard greens with a generous pinch of salt until bright green and tender but still slightly firm. Transfer to a bowl and tent with foil.
  • Melt 2 tablespoons butter in the pan. Sprinkle the cut side of the peach or apple wedges with raw sugar and place sugared side down in the butter. Let them caramelize without moving, then flip and cook until fork-tender.
  • Divide the pulled pork into six portions and pile each onto a cornbread round. Add the collards, top each stack with a piece of griddled fruit, and serve warm.
