I adore tacos and alliteration, but I refuse to confine my taco devotion to just one day. I eat tacos so often that the idea of limiting them to “Taco Tuesday” feels wrong. No restrictions — my motto is all tacos, all the time. Today’s obsession (and it’s not even Tuesday): Carne Asada Tacos (Grilled Beef Tacos). These are among the best tacos you can make, and like great tacos everywhere, they’re incredibly simple.

Carne asada tacos are more than grilled beef on a tortilla. They balance sweet, spicy, citrus, garlic, and beefy flavors, and they shine when paired with fresh pico de gallo, ripe avocado slices, a few cilantro leaves, and a squeeze of lime. For color and crunch, thin radish slices are a lovely optional addition. I enjoy them both with and without radish.

Cook’s Notes:

  • The essentials in these tacos are the carne asada and the tortilla. Most people prefer lightly charred corn tortillas, and that char adds authenticity and flavor, but a charred flour tortilla works well too — I won’t complain if you serve them that way.
  • If you want a great pico de gallo to top your tacos, make a fresh batch of chopped tomatoes, onion, jalapeño, cilantro, lime, and salt. Fresh pico brightens the dish.
  • When your carne asada rests, save the juices that collect. Drizzling that concentrated beef flavor over the chopped meat in the taco elevates the whole thing. Trust me — it’s worth saving every drop.

Smoky, marinated, grilled carne asada is chopped and piled into charred tortillas, then topped with avocado, pico de gallo, cilantro, and a squeeze of lime.

Ingredients

  • 1 batch carne asada rested
  • corn or flour tortillas warmed or charred over the grill or open flame
  • lime wedges

Optional but tasty garnishes:

  • pico de gallo
  • avocado slices
  • additional cilantro sprigs
  • thinly sliced radishes

Instructions

  • Slice the carne asada diagonally against the grain. Turn the slices 90 degrees and chop across them into small bite-sized pieces, about 1/2 inch or smaller. Place the chopped beef in a bowl; juices will collect at the bottom.
  • Stack two warmed corn tortillas on a plate, add a portion of chopped carne asada, drizzle with some of the collected juices, and squeeze a lime wedge over the meat. Top with any or all of the optional garnishes and serve immediately.
