I’m excited to share Breakfast Hot Pockets — flaky puff pastry pockets filled with cheesy scrambled eggs, green onions, and breakfast sausage — made with sharp cheddar for bold flavor.
A handheld, spectacular breakfast is always a win, and these homemade Breakfast Hot Pockets deliver: flaky pastry wrapped around fluffy, cheesy eggs and savory sausage.

These aren’t the frozen pockets from the supermarket. Homemade versions won’t be frozen in the center and provide superior texture and flavor. We fill frozen puff pastry with fluffy, cheesy scrambled eggs brightened by green onions, then add cooked breakfast sausage for a portable, satisfying meal.
Hot Pocket Breakfast
The ingredient list is short and likely mostly pantry staples. If you keep puff pastry in the freezer, this comes together quickly.
Ingredients
- Puff pastry dough (thawed)
- Butter
- Eggs
- Kosher salt
- Green onions, thinly sliced
- Fully cooked breakfast sausage links
- Shredded sharp cheddar cheese
I prefer fully cooked country-style breakfast sausage links, but any fully cooked sausage—links, patties, or crumbles—works. Vegetarian or vegan sausage substitutes are fine too. Just be sure the filling sausages are fully cooked before assembling.
Cheesy Scrambled Eggs
Making the scrambled eggs is the most involved step, and it’s simple. Whisk eggs with a splash of milk and salt, then cook gently over low heat in butter. Patience pays off: low heat makes tender, fluffy curds.
When the eggs are soft-set, sprinkle in a generous amount of shredded sharp cheddar and stir until melted. Fold in thinly sliced green onions. For best results, cool the eggs in the refrigerator for at least 20 minutes so they’re easy to handle and won’t melt the pastry fat when assembled.

Equipment
- Cutting board
- Chef’s knife
- Pastry brush
- Liquid measuring cup
- Whisk
- Silicone spatula or wooden spoon
- Non-stick skillet
- Fork
- Half sheet pan
- Parchment paper
How to Work with Puff Pastry
Puff pastry creates impressive results with minimal effort because it contains many thin layers of dough separated by fat. Follow four simple rules for the best puff:
- Keep it cold. Cold fat preserves the layers so steam forms during baking and creates a flaky rise. If the dough warms up while you work, cover it and chill briefly.
- Handle minimally. Excess handling warms and compresses the layers.
- Cut straight down with a sharp knife. Clean cuts preserve the layer structure and encourage a higher puff.
- Brush only the top with egg wash. Avoid brushing the cut edges so the pastry can puff freely.

Breakfast Hot Pockets
Preheat oven to 400ºF.
Whisk eggs with milk and salt until even in color. Reserve about 1/3 cup of the mixture for brushing the pastries. Melt butter in a non-stick skillet over low to medium-low heat and pour in the eggs. As the eggs begin to set, use a silicone spatula to gently scrape cooked curds from the edges to the center until the eggs are soft-set.
Sprinkle shredded cheddar over the eggs and stir until melted. Stir in thinly sliced green onions, remove the pan from heat, and spread the eggs on a large plate. Chill in the refrigerator until cool, stirring occasionally.
Unfold one sheet of puff pastry and cut straight down along fold lines to make three long rectangles, then cut each in half crosswise for six equal rectangles. Place the rectangles on a parchment-lined sheet pan with at least 2 inches between them and refrigerate the pan.
Lightly flour a work surface and unfold the second sheet of puff pastry. Roll it gently to enlarge it by about 4 inches in each direction (roughly 14″ x 19″), then cut along the fold lines into three long rectangles and cut each in half to make six slightly larger rectangles.
Remove the chilled base rectangles from the refrigerator. Brush the perimeter of each base lightly with the reserved egg wash. Divide the cooled cheesy scrambled eggs evenly among the bases, leaving a 1-inch border. Use your hands to mound the eggs slightly and nestle two fully cooked sausage links lengthwise in the center.
Lay a larger pastry rectangle over each filled base and tuck any exposed filling back under the top layer. Use a fork to crimp the edges gently to seal, leaving fork marks rather than mashing the edge flat. Brush the tops with remaining egg wash and cut small vent slashes in each pastry.
Bake 25 to 30 minutes, or until pastry is puffed and deep golden brown. Remove the pan from the oven and let the pastries rest on the pan for 5 minutes before serving.

Preheat the oven to 400ºF.
-
Crack the eggs into a bowl or liquid measuring cup and whisk with the milk and salt until even in color. Reserve about 1/3 cup for brushing the pastries.
-
Melt butter in a non-stick pan over low to medium-low heat and pour in the eggs. As they set, gently scrape the curds toward the center until mostly soft-set.
-
Sprinkle cheese over the eggs and stir until melted. Stir in sliced green onions. Remove from heat, spread eggs on a plate, and chill until cool.
-
Unfold one puff pastry sheet and cut along fold lines into three long rectangles, then cut in half for six equal pieces. Place on a parchment-lined sheet pan and refrigerate.
-
Roll the second sheet slightly larger, then cut similarly into six slightly larger rectangles to use as tops.
-
Brush the perimeter of each base with reserved egg wash. Divide the cooled eggs among the bases, leaving a 1-inch border, and nestle two cooked sausage links into each.
-
Top with the larger pastry rectangles, tuck in any filling, and crimp edges with a fork. Brush tops with egg wash and cut small vent slashes.
