Chili Lime Cauliflower Popcorn Recipes & Snack Ideas

Chili Lime Cauliflower Popcorn. Grain-free, gluten-free, vegan, and paleo snack! Don't let that deter you though, this is awesome!

I’m obsessed with my dehydrator. It sounds odd, but it’s become one of the most useful appliances in my kitchen. It doesn’t fold laundry or pick flowers, but it transforms produce into crunchy, crave-worthy snacks — and that, to me, is love.

One of the best things about dehydrated snacks is how they get even the pickiest eaters interested in vegetables. My most adamant non-veg kid begs for dehydrated veggies: eggplant, kale, apples, bananas, pears — he loves the crispy texture. Of everything we make, one snack stands out above the rest: Chili Lime Cauliflower Popcorn.

It’s ridiculously simple. Break a head of cauliflower into small florets — about the size shown in the photo — then toss them with a little extra virgin olive oil, the juice of one lime, chili powder, cumin, and salt. Spread the florets in a single layer on dehydrator trays and dehydrate until they shrink and crisp up into light, popcorn-sized pieces.

The result is a snack with all the satisfying crunch of chips but made entirely from cauliflower. I love salty snacks like Fritos and pretzel sticks, and yet this Chili Lime Cauliflower Popcorn really holds its own. I once turned two large heads of cauliflower into this snack overnight and by noon the next day my husband and I had eaten half the batch between us. After that we limited ourselves to a cup a day — but my son? He can nibble away to his heart’s content because he’s finally eating vegetables willingly.

We try to keep a jar stocked for him, though it’s a challenge because everyone in the house loves it. Even his friends dig in and one of them said, “I don’t like cauliflower. Why is this so good?” That felt like a win.

Which dehydrator should I buy?

If you’re just experimenting and a bargain dehydrator from a yard sale gets you making recipes, go for it. But if you plan to preserve summer produce regularly, spend a little more and buy a reliable model with multiple trays, even drying, and an adjustable thermostat. These types dehydrate more consistently than old round-stack units and don’t require rotating trays. They handle heavy use and are invaluable for gardeners saving abundant crops. They also make it easy to prepare healthy snacks and fruit leathers that you’ll be happy to feed your family.

Chili Lime Cauliflower Popcorn

Rebecca Lindamood

Ingredients

  • 1 large head cauliflower
  • the juice of one lime
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons chili powder depending on desired heat
  • 1 teaspoon kosher or sea salt
  • 1/4 teaspoon ground cumin

Instructions

  • Trim the leaves and break the cauliflower into small florets no larger than the tip of your thumb. Wash and drain them well. Transfer the florets to a large mixing bowl and toss with the lime juice, olive oil, chili powder, cumin, and salt until evenly coated.
  • Spread the florets in a single layer on dehydrator trays. Dehydrate at 135°F (if your dehydrator has an adjustable thermostat) for 6–12 hours, or until the pieces are about popcorn-sized and completely dried through. Let them cool to room temperature; they will crisp more as they cool. Store in an airtight container for up to a month. If they soften, refresh them in the dehydrator for a couple of hours.
