Caramel-Stuffed Dark Chocolate Pretzels (No-Bake)

We’re entering peak baking season, and many of us are planning treats to share at holiday gatherings or cookie exchanges. If you’re short on time but still want to give something impressive, consider making Caramel Stuffed Dark Chocolate Covered Pretzels.

These treats combine crunchy sourdough pretzels, thick chilled caramel and rich dark chocolate, finished with a sprinkle of flaky sea salt. They require no baking and come together quickly—just melt chocolate, fill the pretzel hollows with chilled caramel, and coat and drizzle with more chocolate (and caramel, if desired).

The result is a glossy, crunchy chocolate-covered pretzel that oozes perfectly gooey caramel when bitten into. The contrast of salty and sweet makes them ideal for gifting or keeping as a special indulgence.

Choose a dark chocolate you enjoy eating by itself—quality matters since it’s the primary flavor. A 60–70% cacao bar or good melting discs work well. For the base layer, breaking chocolate into small rectangles and softening them slightly in a warm oven creates a solid chocolate cup under each pretzel to hold the caramel. Then you fill with chilled caramel and finish with a generous coating of melted chocolate.

When melting chocolate, do so gently—either in short microwave bursts at reduced power or over a double boiler—to avoid scorching or seizing. You don’t need to temper the chocolate for these treats, but do aim for a smooth, slightly thick consistency so it stays in place when spooned over the filled pretzels.

For the caramel, a thick, chilled homemade sauce gives the best texture and flavor, but a quality jarred caramel will work in a pinch. Chill the caramel thoroughly before transferring it to a zipper bag for piping, or use spoons to place a dollop into each pretzel cup. A chilled, dense caramel will stay where you put it and create that satisfying ooze when bitten.

These pretzels are made in two main chocolate steps: 1) create the chocolate base under each pretzel to form a cup for the caramel, and 2) top the filled pretzels with more melted chocolate to seal and finish them. After the top layer has begun to set, drizzle additional chocolate and caramel over the finished pieces and sprinkle flaky sea salt for a beautiful final touch.

Prep Tips (make them more easily)

  • Select a good dark chocolate you enjoy; melting disks or chopped bars both work.
  • Chill the caramel so it’s thick and pipeable or spoonable without running.
  • Line a half sheet pan with parchment to make cleanup and cooling easy.
  • Soften chocolate gently in a warm oven or using short microwave bursts to avoid overheating.
  • If you’re short on time, refrigerate between steps to speed setting.

Crunchy pretzels dipped in dark chocolate and filled with thick caramel for an irresistible salty-sweet bite.

Ingredients

  • 3 Dark Chocolate Bars choose a quality 60–70% bar
  • 4 cups Dark Chocolate Melting Discs
  • 1 1/2 cups Thick caramel sauce homemade or a good-quality store-bought caramel, thoroughly chilled
  • 1/3 cup Caramel baking chips
  • 1 tablespoon Flaky sea salt (Maldon or similar)
  • 12 Sourdough pretzels

Instructions

  • Preheat the oven to 350°F. Line a half sheet pan with parchment paper.

Break the chocolate bars into small rectangles (about two squares each). Arrange a rectangle on the lined sheet pan and place one pretzel on top of each chocolate piece, leaving space between them. Turn the oven off, prop the door open slightly, and place the pan in the warm oven for about 3 minutes or just until the chocolate is glossy and partially softened. Remove and gently press the pretzels into the softened chocolate to close gaps and make a base cup.

Allow the chocolate base to firm at room temperature, or chill briefly to speed things up. Once set, pipe or spoon chilled caramel into the pretzel hollows. Refrigerate for 10 minutes to let the caramel settle.

Melt the chocolate melting discs gently in a double boiler or microwave in short bursts. Spoon melted chocolate over each caramel-filled pretzel to cover completely. Let set at room temperature or refrigerate to firm.

Melt the caramel chips in a double boiler, then use a fork to drizzle chocolate and a second fork to drizzle caramel over each pretzel. Sprinkle flaky sea salt on top, then repeat drizzles if desired. Let stand uncovered until fully firm.

Store finished pretzels in an airtight container at room temperature for up to 3 days.
