Cheesy Squash Tian: Layered Baked Summer Squash Casserole

Cook’s Notes

  • A tian is not fussy. Slice one zucchini, one squash, and two onions, stack them in a pan, drizzle with oil, season with salt and pepper, and bake until tender. Top with cheese and bake until bubbly.
  • Choose zucchini and squash of similar size, about 8–10 inches long, and slice into roughly 1/4-inch rounds for even cooking.
  • Arrange the slices however you like. You can group colors together or alternate them. Tuck an onion slice every few pieces so the flavor melds throughout the dish.
  • Cover the pan with foil for the initial bake so the slices steam and become tender without browning or shriveling. Remove the foil to finish and brown the top.
  • Cheese makes it heavenly. A mix of mozzarella for stretch, Swiss for nuttiness, and a bit of Parmesan for bite works beautifully. Use the cheeses you enjoy, but include some mozzarella if you like a gooey finish.

Ingredients

  

  • 1 medium zucchini {8 to 10 inches long} sliced into 1/4 inch thick rounds
  • 1 medium squash {8 to 10 inches long} sliced into 1/4 inch thick rounds
  • 2 medium onions peeled, trimmed, and sliced into 1/4 inch thick rounds
  • 2 tablespoons olive oil divided
  • 2/3 teaspoon kosher salt
  • freshly ground black pepper
  • 2 cups grated cheese {See cook’s notes}

Instructions

 

  • Preheat oven to 400°F. Drizzle 1 tablespoon of olive oil into the bottom of a pie plate or an 8-inch baking dish. Arrange the zucchini, squash, and onion slices in the dish, stacking and fanning them to create an even layer. Season with salt and pepper and drizzle the remaining olive oil on top. Cover with foil and bake for 30 minutes.
  • Remove the foil, sprinkle the cheese evenly over the vegetables, and return to the oven for 10–15 minutes, or until the cheese is melted and golden in spots. Let the tian rest for 5 minutes before serving.
