Ridiculously easy crispy chicken tacos combine the best of tacos, taquitos, and nachos. Flavorful shredded chicken and generous amounts of melted cheese are folded into corn tortillas and baked until they’re crispy, crunchy and utterly irresistible—perfect for busy weeknight dinners.

My family couldn’t get enough of these extra-crunchy tacos. Even better, they come together in the time it takes for the oven to preheat—fast, fuss-free, and crowd-pleasing.
This recipe is budget friendly, easy to scale, and very forgiving. I like to finish mine with a squeeze of lime and toppings like shredded lettuce, avocado, cilantro, sour cream and a splash of hot sauce or salsa. Because the shells get so crispy, treat them like open-faced tacos and pile the toppings on top rather than trying to stuff them inside.
These tacos are best eaten soon after baking for maximum crispness. If you have leftovers, reheat them briefly in an air fryer or a hot oven to restore crunch.

Baked Chicken Tacos
Below is a concise ingredient and equipment list so you can gather what you need. The ingredients are common, inexpensive, and easy to swap based on what’s on hand.
Ingredients
- Shredded chicken (rotisserie or leftover)
- Chicken taco seasoning (homemade or store-bought)
- Corn tortillas (extra thin or very pliable work best)
- Olive oil
- Monterey Jack, Pepper Jack, or another melty cheese
- Lime wedges
- Optional: shredded lettuce, avocado or guacamole, chopped tomatoes or salsa, sour cream, hot sauce, creamy chipotle sauce, enchilada sauce, salsa verde, fresh cilantro
Leftover shredded chicken makes this recipe especially quick. If you don’t have leftovers, shred a rotisserie chicken or cook a few boneless, skinless chicken breasts or thighs and shred them. You can also swap the protein—seasoned ground beef, pulled pork, or black beans all work well.
Choose thin, pliable corn tortillas to reduce splitting when folding. Flour tortillas can be used but won’t crisp up as much as corn.

I’ve had good results with extra-thin corn tortillas that fold without cracking. For cheese, Monterey Jack and Pepper Jack melt beautifully; a Mexican cheese blend or cheddar will work, too—expect slightly different texture and more crisped cheese edges on the pan.
Because these tacos are very crunchy once baked, plan to top them rather than try to open them and stuff them like a soft taco.
Equipment
You likely already have everything needed:
- Mixing bowl (optional if you’ll toss seasoning in a bag)
- Measuring cups and spoons
- 2 half sheet pans
- Brush or small spatula for oil (optional)

Crispy Chicken Tacos
Preheat the oven to 450°F (230°C).
1. Toss 4 cups shredded chicken with about 2 tablespoons chicken taco seasoning and set aside.
2. Wrap 14 corn tortillas in a damp towel and microwave 30–60 seconds until pliable. Keep them warm near the sheet pans.
3. Lightly spray two half sheet pans with nonstick spray. Brush both sides of the tortillas with about 1/4 cup olive oil (stacking and brushing the top of each stack speeds this step).
4. On a greased pan, place one tortilla and scatter roughly 2 tablespoons grated cheese on half of it. Top with ~1/4 cup seasoned chicken and another 2 tablespoons cheese. Press lightly so the filling holds together, fold the tortilla over, and carefully flip so the chicken weights the tortilla. Arrange tacos in a single layer with space for air to circulate.
5. Repeat until all tortillas are filled. Bake 8–10 minutes, then carefully flip each taco with a spatula and bake another 8–10 minutes, until the tortillas and any escaped cheese are deeply golden and crisp.
6. Let tacos rest 3 minutes to continue crisping. Squeeze fresh lime over the tops and serve with your preferred toppings.
