I have a soft spot for bold, aromatic foods: garlic, feta, olives, pungent cheeses and strong onions. I’ve loved those assertive flavors for as long as I can remember.
Once, when I was a teenager, my mom stopped me on the way to a dance and said, “Honey, maybe brush your teeth — you ate an onion and mustard sandwich.” To be fair, it also had Cheddar. Still, she was trying to help, though I suspect a little bad breath might have made it easier for me to stay away from boys back then.
All joking aside, intensely flavored foods often taste better, and this recipe brings together two of my favorites: roasted garlic and feta.
Feta is wonderfully crumbly, which is perfect for salads, pilafs, Greek salsa, pizza, or spanakopita dip. But it also tends to fall off sandwiches, leaving salty crumbs everywhere instead of on your tongue. That used to frustrate me — until I discovered whipped feta.
A friend of mine posted a whipped feta recipe that solved the crumbling problem and made my life infinitely better (and my breath more memorable). I took the idea and added a generous amount of roasted garlic, which makes the spread even more irresistible.

Here’s what makes this spread so good: room-temperature crumbled feta is combined with softened cream cheese and several cloves of silky roasted garlic.

All the ingredients are blended in a food processor until completely smooth and creamy. The mixture will be warm and glossy from processing — perfect for scooping up with fresh bread. If you can resist scraping the bowl clean with torn pieces of bread, you’re stronger than I am. I won’t pretend I didn’t lick the bowl when I ran out of bread.

Now that I’m married, I can indulge in bold flavors at home without worrying — and my husband happily shares in the spoils.

How do I use a jar of Roasted Garlic Whipped Feta? In so many ways: spread it on black olive rolls with greens for a quick lunch, slather it on toasted burger buns under a grilled turkey burger for an instant Greek-style sandwich, spread it on crackers, use it as a vegetable dip, or dollop it over grilled fish. I’ve barely scratched the surface of possibilities — it’s versatile, flavorful, and makes everything taste better.
XO
Rebecca
P.S. If you’ve already made homemade feta, this recipe benefits from that extra level of freshness and flavor.
