These Inside Out Peanut Butter S’mores Bars are an irresistible blend of all the best parts of a s’more with a peanut butter twist. Imagine a graham cracker sandwich filled with creamy peanut butter and a dollop of marshmallow creme, dipped in dark chocolate and finished with a scattering of tiny marshmallow bits. Soft, crunchy, chocolatey and gooey all at once—this treat is simple to make and perfect for parties, lunchboxes, or an autumn evening.
The idea came from a local Amish vendor at the farmer’s market who sells chocolate-covered, peanut butter–filled graham cracker treats. After the season ended and those treats were no longer available, I recreated my own version at home. To capture that s’mores flavor without the campfire, I mixed marshmallow creme with the peanut butter filling. The result tastes like an inside-out s’more, a moon pie, and a peanut butter-and-fluff sandwich all rolled into one.
These bars are a little messy to assemble—marshmallow creme can be sticky and likes to move around—but the payoff is well worth the fuss. Kids and adults alike will hover in the kitchen while you make them. A piping bag or a sturdy plastic bag with the corner snipped makes adding the marshmallow creme much easier. If you plan to make these for Halloween, you can get playful with mini-marshmallow decorations on top. Everyone loved the final product so much that cleaning up afterward felt like a fair trade for another batch.
Cooking notes
- Working with marshmallow creme: Pipe a small coin of marshmallow creme into the center of the peanut butter line. If you use a piping bag, slide a knife across the tip to release the creme cleanly. This works better than trying to twirl the creme into a curl.
- Stabilize the filling: The marshmallow creme can slide; if it moves, gently nudge it back into place with the top graham cracker before dipping in chocolate.
- Top cracker caution: The top cracker may shift during assembly. Reposition it before coating in chocolate to keep each sandwich intact.
- Don’t skimp on peanut butter: It acts as the glue for the marshmallow creme and keeps the sandwiches together. If you have a peanut allergy, substitute sunflower butter.

Inside Out Peanut Butter S’mores Bars
Rebecca Lindamood
Ingredients
- 1 box honey graham crackers (3 sleeves of crackers)
- 1 jar smooth peanut butter (16 ounces)
- 1 jar marshmallow creme (7 ounces)
- 2 1/2 bags semi-sweet chocolate chips (12 ounce total or about 5 cups chocolate chunks; see notes)
- 1/4 cup extra virgin coconut oil or vegetable shortening
- 1 cup tiny marshmallow bits
Instructions
-
Line two baking sheets with parchment paper. Break the graham crackers along the scored lines so you have individual squares. Arrange half of the squares on the parchment with space between them.
-
Place the peanut butter and marshmallow creme into disposable pastry bags fitted with large plain tips, or into two gallon-sized zipper bags. If using zipper bags, push the filling to one corner, twist the bag to keep it in place, secure with a tie, and snip the corner. Pipe a line of peanut butter down each graham square. Add a dollop of marshmallow creme (about the size of a marble or nickel) in the center of each peanut butter line. Top each with another graham square. Set aside while you prepare the chocolate coating.
-
Combine the chocolate chips or chunks and the coconut oil or shortening in a microwave-safe bowl. Microwave on HIGH for 2 minutes, stir, then continue heating in 30-second bursts, stirring between each, until the chocolate is fully melted and smooth.
-
One at a time, lower each graham sandwich into the melted chocolate and turn to coat completely. Use two forks to lift the sandwich and let excess chocolate drain off, then transfer back to the parchment-lined sheet. Sprinkle tops with tiny marshmallow bits if desired. Allow the chocolate to set. Store at room temperature for up to two weeks.
