My favorite meals are often the ones that require the least fuss. While elaborate dishes have their place, the recipes that surprise me most are usually the simplest — five ingredients or fewer and just a few minutes of hands-on time. This Lemon Pepper Grilled Zucchini is a perfect example. All you need are baby zucchini, a lemon cut in half, olive oil, kosher salt, and cracked black pepper. Toss, grill, squeeze, and you’ve got a bright, satisfying summer side.

The method is straightforward and forgiving. Coat the whole baby zucchini in olive oil, salt, and cracked black pepper, leaving a little of the seasoning behind in the bowl. Slide the cut lemon halves through the leftover oil and seasoning, then place them cut-side down on the hottest part of the grill alongside the zucchini. Turn the zucchini occasionally; even the largest baby zucchini should be done in five to six minutes total. Move everything to a serving plate and, just before serving, squeeze the charred lemon over the zucchini for an impressive burst of flavor.

There’s real magic in grilling lemons. The heat softens and caramelizes the fruit’s natural sugars while mellowing sharp acidity, producing a concentrated, sweet-tart brightness that elevates the zucchini. It adds an unexpected depth that makes the dish feel special — I almost licked the plate the first time I tried it.

This side pairs beautifully with burgers, and it’s equally delicious alongside grilled fish, chicken, pork, or steak. Its speed and minimal prep also make it ideal for casual summer entertaining. What would you serve with Lemon Pepper Grilled Zucchini?

Cook’s Notes

  • Baby zucchini are common in summer at farmers’ markets, grocery stores, or straight from the garden. If you don’t find baby zucchini, halve or quarter small, more mature zucchini. Larger zucchini can be adapted to different recipes if you prefer a casserole-style dish.
  • When you toss the zucchini with oil, salt, and pepper, leave a little of the mixture in the bowl so the cut lemon halves can be mopped in it before grilling. That adds more seasoning and helps the lemon caramelize nicely.
  • Place the lemons on the hottest part of the grill and leave them undisturbed at first. They’ll sizzle and char — that sound and flare are what create the sweet, concentrated flavor in the finished lemon.
  • Use long-handled tongs or a sturdy spatula to remove hot, charred lemon halves from the grill. Slide one side of the tongs or spatula under the lemon and lift gently, squeezing only enough to keep it from slipping. You want to move the lemon to the plate without squashing out the juice on the grill.
  • Hold off on squeezing the lemon over the zucchini until you’re ready to serve. Doing it at the table adds a bit of drama and fresh flavor right before eating.
  • This is best served warm, although leftovers are pleasant at room temperature. It can be served cold, but it rarely lasts long enough around here to test that fully.

Lemon Pepper Grilled Zucchini

Rebecca Lindamood

Ingredients

  • 20 baby zucchini or 4 small zucchini, quartered
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon cracked black pepper
  • 1 whole lemon scrubbed, and halved

Instructions

  • Preheat the grill to high. In a mixing bowl, toss the baby zucchini with the olive oil, kosher salt, and cracked black pepper. Use tongs to transfer the zucchini to the grill. Slide the cut sides of the lemon in the bowl to mop up any remaining oil and seasoning. Place the lemons cut-side down on the hottest part of the grill and leave them until charred.
  • Turn the zucchini occasionally to develop even grill marks and cook until crisp-tender, about 5 to 6 minutes total. Transfer the zucchini to a serving plate. Carefully remove the charred lemon halves from the grill without squeezing them, place them cut-side up on the zucchini, and squeeze the juices over the vegetables right before serving.
