Roasted Ginger Sesame Green Beans may not be the prettiest side dish on the table, but they more than make up for it with bold flavor and effortless preparation. Crisp-tender, blistered, and warmly seasoned with ginger, garlic, and sesame, these beans are both surprisingly simple to make and impossible to stop eating.

Beyond their addictive taste, green beans are a nutritious choice: they provide protein, B vitamins (including thiamin, riboflavin, niacin, and B6), beta-carotene, chlorophyll, magnesium, silicon, calcium, and more. That said, the real appeal of these Roasted Ginger Sesame Green Beans is how versatile they are—an ideal side for dishes with Asian-inspired flavors, and a great match for fish, chicken, or beef.
When a pan comes out of the oven, the scent of roasted garlic and fresh ginger is irresistible. These beans are roasted at a very high temperature just long enough to blister and develop some charred spots while remaining tender-crisp. Serve them hot, sprinkle with toasted sesame seeds, and watch them disappear fast—often before anyone can stop you from sampling directly from the baking sheet.
They pair especially well with bold mains—think miso-glazed cod or salmon, Chinese-style pork, spicy pork and tofu, slow-cooked five-spice pork, or a simply roasted turkey—though they’re equally delicious with pan-seared or baked fish, grilled chicken, or beef.

Cook’s Notes
- Use a very hot oven: preheat to at least 450°F. If your oven reaches 500°F, that’s even better for quick blistering.
- Fresh whole green beans give the best texture. If you must use frozen, choose whole beans rather than cut ones.
- Toss the beans with the oils, ginger, garlic, and salt directly on a rimmed baking sheet—no extra bowls required.
- Avoid crowding the pan. Roast in a single layer so the beans can blister and brown. A rimmed half sheet pan works well and lets you shake the pan during cooking without spilling.
- Do not add sesame seeds before roasting. They burn easily at high heat. Sprinkle toasted sesame seeds over the beans after they come out of the oven so they stay flavorful and attractive.
- Remove the beans when they are blistered with a few blackened spots but still crisp-tender. They will shrink slightly as they cool—this is expected and a sign they’re done correctly.

Roasted Ginger Sesame Green Beans

Pin Recipe
Ingredients
- 1 pound fresh green beans ends trimmed
- 2 teaspoons canola oil or peanut oil
- 1 teaspoon toasted sesame oil
- 1 1/2 teaspoons grated fresh ginger root
- 2 cloves garlic peeled and minced
- 3/4 teaspoon kosher salt
- 1 teaspoon toasted sesame seeds
Instructions
-
Preheat the oven to 450°F. If your oven reaches 500°F, preheat to that higher temperature for a quicker blister.
-
On a rimmed baking sheet, toss the green beans with canola or peanut oil, toasted sesame oil, grated ginger, minced garlic, and kosher salt until evenly coated. Spread the beans in a single layer and roast for 8 to 15 minutes, shaking the pan every three minutes or so, until the beans reach your preferred level of crispness. I like them pulled when they are still crisp-tender with some blistering and scattered blackened areas. While the beans are still hot, sprinkle with toasted sesame seeds, toss to coat, and serve immediately.
