My husband has been traveling for business a lot lately and eating out almost every day. He says he’s tired of restaurant food: “It’s the same thing — lots of bread, heavy meat dishes, not enough vegetables. I want something home cooked.” I understand. Regularly eating meals made at home just makes you feel better and healthier.
That said, home cooking doesn’t have to be fussy or complicated. It can be quick, affordable, and satisfying — especially when you build meals from a few simple, flavorful components.
Today’s favorite at our house is Baked Ranch Fish Tacos. These tacos start with the Baked Ranch Fish Nuggets I shared previously and layer them over a Sweet Corn and Black Bean Salsa. Add Pickled Red Onions, halved cherry tomatoes, torn romaine, and a drizzle of Smoked Paprika Chipotle Sauce for a bright, crunchy, and smokily spicy taco.
These tacos combine textures — crunchy, creamy, crisp — and flavors — salty, savory, tangy, sweet, and spicy — in a handheld meal the whole family enjoys. Older kids can’t get enough, and even the little ones like them once you leave off any vegetables they find scary.
Best of all, this meal can be ready in about 30 minutes from start to finish if you have a jar of Smoked Paprika Chipotle Sauce and a batch of Pickled Red Onions in the fridge. If you don’t, the pickled onions take about five minutes of hands-on time plus an hour to rest (or you can buy ready-made pickled onions or simply use fresh chopped red onion). The smoked paprika chipotle sauce is a five- to ten-minute make-ahead item as well. None of these steps are difficult, and the whole dinner is budget-friendly, too.
Cook’s Notes:
- While the Baked Ranch Fish Nuggets are in the oven, prepare the Sweet Corn and Black Bean Salsa and lightly char your corn tortillas over the burner. Stack the warmed tortillas and wrap them in a clean towel to keep them soft and pliable while the fish finishes baking.
- Serve buffet-style or family-style so everyone can assemble their own tacos at the table. Letting diners build tacos themselves keeps them fresh and lets each person customize toppings.
