Meet my new favourite milkshake: the Guinness Double Chocolate Malted Milkshake.
Yes, Guinness — the stout. Before you dismiss the idea, hear me out: this combination works surprisingly well. Guinness brings rich caramel and dark chocolate notes plus real maltiness. The result is not a beer-forward dessert but a deeply chocolatey, malty milkshake with subtle caramel undertones.
When I offered this to my husband, he took a sip and declared, “This is the best malt I’ve ever had.” He couldn’t taste the beer, and even after I told him Guinness was in it, he was skeptical. That’s the trick: the stout contributes malt and caramel complexity without tasting like beer in ice cream. To achieve the same depth with powders and syrups would mean adding large quantities of malt powder — which can make the shake gritty — and seeking out dark caramel syrup. One bottle of Guinness delivers that flavor cleanly and smoothly.
This shake offers deep chocolate, dark caramel, and a bold malt character, making it ideal for anyone who likes sophisticated desserts. But it’s also wonderfully approachable: it’s quick to make and impressive to serve. It’s a great choice for a St. Patrick’s Day gathering or any time you want a decadent, adult-style milkshake.
If you’re hosting, blend it up and return to your guests — just be sure the blender lid is secure because the carbonation in the stout can cause some sloshing. If you end up with leftovers, freeze them in ice cube trays and pulse in the blender when you want them again; the texture returns nicely.

Will you try the beer-and-ice-cream pairing? It’s less daring than it sounds and absolutely worth a taste.

Ingredients
For the Guinness Double Chocolate Malted Milkshake:
- 1 bottle of Guinness draught-style stout beer 11.9 ounces, slightly chilled
- 1 pint good quality chocolate ice cream
- 2 tablespoons chocolate syrup
- Bailey’s whipped cream (see below)
- crushed Whoppers malted milk ball candies, for garnish
For the Bailey’s Whipped Cream:
- 1/2 pint whipping cream 1 cup
- 1 ounce Bailey’s Irish Cream
- 1 tablespoon sucanat or brown sugar
Instructions
To Make the Bailey’s Whipped Cream:
-
Stir the whipping cream, Bailey’s, and sugar until the sugar dissolves. Charge in a whipped cream dispenser according to the manufacturer’s instructions, or whip with a stand mixer, hand mixer, or by hand until you reach firm peaks. If not using a dispenser, cover tightly and refrigerate for up to 3 days.
To Make the Guinness Double Chocolate Malted Milkshake:
-
Combine the Guinness, chocolate ice cream, and chocolate syrup in the blender carafe. Secure the lid tightly — carbonation will cause the mixture to slosh, so a snug lid is important. Blend on high until smooth.
-
Pour the milkshake into two glasses, leaving about 1/2 to 1 inch of space for whipped cream. Top each with a generous cap of Bailey’s whipped cream, drizzle with chocolate syrup, and sprinkle with crushed Whoppers. Serve immediately with a straw and a spoon.
