My mom always packed the most wonderful lunches when I was in school. She balanced nutrition with a sense of culinary adventure, so my lunchbox often became the envy of my classmates.
Many people tell stories of lunchbox items becoming a kind of currency at school. I never had to trade because my mom nailed it. I don’t pack lunches every day now that my kids are homeschooled, but this summer I learned how challenging it can be when my youngest attended a full-day ballet intensive for several weeks. The conservatory had strict requests: only water as a beverage, no desserts, and no nuts due to allergies. That was a real test. If you do daily lunches year-round, I have newfound respect for you.
Fortunately, my mom’s years of packing thoughtful meals weren’t wasted. I’ve kept a simple formula that makes it easy to assemble balanced, appealing lunches quickly. Use this Lunchbox Mix-and-Match Formula and packing lunches will be as easy as 1-2-3-4-5.

Lunchbox Mix-and-Match Formula
- Pick a protein. Include a satisfying protein like peanut butter, a hard-boiled egg, fish filet, grilled chicken, turkey sandwich, cheese, tofu cubes, or another option your family enjoys. Protein helps keep energy steady and supports growth and recovery. On colder days, a thermos of hot soup or stew—such as chicken or vegetable beef—can be especially comforting and filling.
- Pick a beverage. Water should always be part of the plan—hydration matters. Where rules are more flexible, add a bottle of juice or a sparkling juice for variety. I like Ocean Spray Sparkling Cranberry or Cranberry Juice Cocktail for a festive boost and extra Vitamin C.
- Pick a carbohydrate. Carbs provide fuel for the day. Options range from bread, wraps, crackers, or pretzels to chips, but dried fruit is one of my favorite choices. Fresh or dried fruit gives natural sweetness, fiber, and a quick energy lift from wholesome carbs.
- Pick a vegetable. Even picky eaters usually tolerate at least one vegetable. Pickles, cucumber slices, baby carrots, or a small salad with dressing can work. If someone prefers roasted options, cauliflower popcorn or a mild salsa can count as the veggie portion—what matters is including something green or crunchy for balance.
- Pick something fun. A little treat or flavor enhancer makes lunch exciting. It could be a small packet of hot sauce, a favorite dip, or a sweet snack like Craisin Fruit Clusters—bite-sized clusters of granola and dried cranberries that feel like a treat while delivering whole grains and fruit.
