Last month on a business trip to Plano, Texas, I had lunch at Taco Diner Plano Legacy and ordered a taco sampler. I chose Puerco Al Pastor and vegetarian Crispy Fried Avocado tacos. Some grilled pineapple from the al pastor tacos landed on a crispy avocado taco, and the combination was so delicious I recreated it at home—this time deliberately—adding fresh lime juice and cilantro. The result: Crispy Avocado Tacos with Grilled Pineapple Relish. They quickly became a favorite.

I have never turned down a taco in almost forty years. To me, tacos and pizza are perfectly designed foods—simple, satisfying, and endlessly adaptable. Even a so-so taco beats a fussy casserole most days. If I had to narrow down foods to live on forever, tacos and pizza would top the list. Maybe add fried dumplings, hamburgers, and my grandmother’s biscuits and cornbread, too. The point is: tacos are life.
This recipe inspired the separate posts for my Crispy Avocado Fries and Grilled Pineapple Relish. Both components are delicious on their own, but together they’re something special: crispy, creamy avocado fries on lightly charred corn tortillas, topped with grilled pineapple relish, a dash of hot sauce, and a few cilantro leaves. The combination of textures and sweet-smoky pineapple with creamy avocado is irresistible.

These tacos are great for entertaining because the avocado fries and the grilled pineapple relish can be prepared in advance. The avocado fries hold up well at room temperature, and the relish often gets better as it rests. When guests arrive, simply char the tortillas, warm everything if needed, and assemble. I like to present the components and let people build their own tacos—this keeps the avocado crispy and prevents sogginess.

Cook’s Notes
- This recipe is ideal for entertaining. Fry the Crispy, Creamy Avocado Fries up to an hour ahead and hold them at room temperature. Prepare the Grilled Pineapple Relish in advance—its flavor improves as it sits.
- You can use flour tortillas, but small corn tortillas bring more flavor and structure to these tacos.
- Char your tortillas. Lightly charring adds a smoky layer that pairs beautifully with the sweet pineapple and corn flavor in the tortillas.
- Avoid assembling the tacos until just before serving to keep the avocado fries crisp. Serving the components family-style and allowing guests to assemble their own tacos prevents sogginess and looks more festive.
