Toasted Marshmallow & Chocolate S’mores Milkshake Recipe

I have a love/hate relationship with s’mores. I adore the toasted marshmallow flavor, but I can’t stand the sticky mess they make. After one particularly memorable incident of marshmallow in my long hair while camping in humid weather, I decided there had to be a better way to enjoy those flavors without the goo. Enter liquid s’mores: a toasted marshmallow and chocolate milkshake that gives you all the campfire taste with none of the stickiness. This S’mores Milkshake is how I do s’mores now—bring on the campfire and the tent; I’m ready.

As a kid I often skipped s’mores because of that sticky aftermath. After one was smeared into my hair, I was done—literally and figuratively. Still, I couldn’t resist the smell and taste of a perfectly toasted marshmallow: the slightly bitter notes from charred sugar balanced by sweet, pillowy marshmallow. That contrast is what drew me back to the idea of capturing s’mores in a different form—drinking them.

To make a true s’mores milkshake you need toasted marshmallows; without them it just isn’t the real deal. I didn’t want to build a campfire indoors, and my usual fire starters were away, so I grabbed our torch. It’s not a fancy culinary torch but a strong, practical one that gets the job done. I toasted five full-sized marshmallows on a skewer until they were nicely charred—don’t be shy with the browning—and set them aside to cool before blending.

Holding the skewer in one hand and the torch in the other let me get plenty of char on the marshmallows, which is important because those smoky, caramelized flavors carry through even after blending. The finished shake tastes like camping around a fire without the sticky consequences.

Cook’s Notes

  • The amount of milk is flexible. For a very thick, almost paste-like milkshake, use just a splash of milk to help the blender. If you prefer a thinner shake, add up to 1/2 cup of milk.
  • Don’t skimp on charring the marshmallows. Because they’ll be blended, the more toasted and caramelized they are, the more pronounced the flavor will be.
  • I like dark chocolate ice cream for this shake, but any quality chocolate ice cream will work. If you only have regular chocolate ice cream, stir in 1 tablespoon Dutch-process cocoa powder to boost the chocolate depth.
  • Graham crackers are traditionally part of s’mores, but I prefer Teddy Grahams here for a little whimsy and just the right graham presence—plus they’re fun for dipping.
  • Marshmallow fluff adds silky sweetness. Homemade fluff is superior if you have the time, but store-bought works fine in a pinch.
  • Pipe the marshmallow fluff on top with a wide tip for a pretty finish, or spoon it on if you prefer. Presentation is optional but delightful.
  • Use a jar or glass that can handle both heat and cold. Canning jars are sturdy and ideal for this mix of toasted topping and icy shake.
  • Serve with a spoon—there’s likely to be toasted marshmallow to scoop—or include a small bowl of extra Teddy Grahams for dunking if you don’t mind a little stickiness for your guests.
