Let’s talk about the rules of Tasty Penance.

  1. I start by tempting you with an indulgent, often nutritionally dubious recipe that’s hard to resist.
  2. Then I feel a little guilty about it.
  3. I make amends by offering a recipe that’s both nutritious and absolutely delicious.
  4. Having made things right, I can go back to sharing more decadent treats.

Pay special attention to number three: the healthy recipe must still taste outrageously good. I don’t do culinary austerity for its own sake—my food must make my taste buds happy. Thankfully, today’s recipe more than satisfies that requirement.

These crisp-tender green beans are garlicky, gingery, and slightly spicy, with a touch of sweetness from the sauce. They’re packed with flavor and they’re genuinely good for you. If you prefer no heat, simply omit the crushed red pepper flakes. Whenever I make this, only about half the dish ever makes it to the table—my partner and I keep sneaking bites until we’re bold enough to eat several at once. Who knew green beans could be this irresistible?

Spring Training is in full swing—Go Red Sox!

One of the best things about this recipe is how easy it is to prepare. Before you start, though, there’s a single crucial warning: many people ruin stir-fries by not being prepared. They get a few steps in and realize they forgot to peel, chop, measure, or even buy a key ingredient, and the whole process falls apart. To avoid that frustration, follow this one firm rule:

Have everything—ingredients and equipment—ready and within reach before you begin cooking.

Make sure your green beans are washed and trimmed, garlic and ginger are minced, onion is sliced, sauces and water are measured, and you have your oil, wooden spoons, and serving bowl at the ready. Once the oil goes in the pan, you’re committed; don’t walk away until the dish is finished and in the bowl. It’s practically a law.

With that done, go conquer the world of stir-fries—starting with this perfect spring green bean dish. Tasty penance tastes even better than the sin.

Simple Garlicky Green Bean Stir Fry

Rebecca Lindamood

Crisp-tender, garlicky, gingery, and coated in a slightly sweet sauce, these green beans are hearty enough to serve as a vegetarian main or as a flavorful side to any stir-fry, grilled, or fried meat. Healthy can be delicious. Adapted from Kalyn Denny of Kalyn’s Kitchen.

Ingredients

  • 1 pound fresh green beans Preferably haricot vert, but any fresh green bean will work. Trim ends and remove strings if needed.
  • 2 tablespoons canola oil Vegetable or peanut oil are fine substitutes.
  • 3 cloves garlic Peeled and minced.
  • 1 tablespoon ginger Peeled and minced.
  • 1/2 teaspoon crushed red pepper flakes Omit if you’re sensitive to heat.
  • 1 large yellow onion
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons water
  • 2 tablespoons oyster sauce Available in the Asian foods aisle.

Optional:

  • Sesame seeds for garnish

Instructions

  • Trim a thin slice from both the blossom and stem ends of the onion. Peel and halve the onion from top to bottom, then slice each half into slivers that match the thickness of the green beans.
  • Heat a large wok or heavy pan with a tight-fitting lid over high heat for 1–2 minutes, until very hot. Add the oil carefully and swirl to heat, about 30 seconds. When the oil shimmers, add the garlic, ginger, onion, and crushed red pepper flakes (if using). Stir constantly with two wooden spoons until fragrant, about 30 seconds. Add the green beans and salt, tossing to combine. Cook for 2 minutes, stirring every 30 seconds.
  • Add the water and cover the pan. Steam the beans for 5 minutes, checking halfway through; if the pan looks dry, add a teaspoon of water, replace the lid, and continue steaming.
  • Remove the lid and stir in the oyster sauce, tossing to coat the beans evenly. Cook over high heat for about 2 more minutes, until the sauce is distributed and the beans are crisp-tender.
  • Serve hot, garnished with sesame seeds if desired. Leftovers keep well in the refrigerator and reheat nicely in the microwave or briefly in a covered saucepan with a splash of water.
