Isn’t there a big sporting event this weekend? You may have heard chatter about it — the perfect excuse for friends, family, and plenty of finger food.
If you’re hosting or heading to a gathering and want something quick, filling, and universally loved, Bubble Pizza fits the bill.
What’s Bubble Pizza? Simply put:
Pizza dough + pizza sauce + pepperoni + lots of cheese = Bubble Pizza

Think of it as a puckered, pull-apart pizza loaf — soft and pillowy inside, crispy and golden on the outside, stuffed with sauce, pepperoni, and gooey cheese. It’s an easy crowd-pleaser that also makes a satisfying weeknight dinner when paired with a crisp green salad.
If you like to be prepared, keep some pizza dough on hand and you’ll have Bubble Pizza ready in about an hour.

Bubble Pizza (Pizza Monkey Bread)
Rebecca Lindamood
Ingredients
- 1 pound pizza dough cut into about 16 equal pieces, or use store-bought dough
- 2 cups pizza sauce use your favorite
- 3 cups grated part-skim mozzarella divide into portions
- 25 thin slices of pepperoni cut into quarters
- 2 tablespoons olive oil
Optional:
- sliced green onions for garnish
Instructions
-
Preheat an oven rack to the center third and heat to 425°F. Drizzle the olive oil into a 9- to 12-inch cast iron or other heavy ovenproof skillet. Use a pastry brush to spread oil across the bottom and up the sides.
-
In a medium bowl, combine the pizza sauce, 1 cup of the mozzarella, and the quartered pepperoni. Stir to mix. Working one piece at a time, drop a dough piece into the sauce mixture and use tongs or forks to coat it thoroughly, then transfer the coated dough to the prepared pan. Repeat with remaining dough pieces. If any sauce mixture is left in the bowl, spoon small dollops over the dough in the pan. Sprinkle the remaining mozzarella evenly over the top. Let the assembled dough rest for 10 minutes while the oven finishes preheating.
-
When the oven reaches temperature, place the skillet on a rimmed baking sheet (to catch any drips) and bake for 25–30 minutes, or until the dough is puffed, set, and the cheese is melted and browned in spots. The loaf will rise as it bakes, so use a baking sheet if contents look near the top of the pan.
-
Remove the skillet and let the Bubble Pizza rest for about 10 minutes. Then place a slightly larger platter or plate on top and carefully invert the pan to release the loaf. Garnish with sliced green onions if you like, and serve warm.
