This Kielbasa and Pierogies Sheet Pan Meal is one of our family’s favorite go-to dinners in the cooler months. We hope you enjoy it as much as we do!
Who doesn’t love pierogies? Mashed potatoes and cheese (or onions) tucked into a tender pasta pocket—what’s not to adore?
For years I prepared pierogies two ways: pan-fried in butter with onions or baked. Yes—baked pierogies. It’s fast and simple: no thawing necessary. Toss frozen pierogies with oil and seasonings, spread them on a sheet pan, and roast. They puff up and brown at the edges, leaving soft, fluffy centers and crispy edges.

Crispy rims around creamy mashed potato filling—yes, it’s drool-worthy.
One busy evening I needed a meal that was quick and satisfying. I sliced a couple packages of kielbasa, halved baby bell peppers, and sliced onions. I tossed the veggies with olive oil, salt, and pepper, arranged the kielbasa around the edge of the sheet pan, and piled seasoned frozen pierogies in the center.
I slid the pan into the oven and returned to finishing my work. Within fifteen minutes the house smelled irresistible. After thirty minutes the kielbasa was browned and juicy, the pierogies puffed golden at the edges, and the onions and peppers were lightly charred and tender.

We served spoonfuls of everything from the pan with grainy mustard and a simple salad. It was devoured and requested on repeat.
Simple meals can be the best meals.
What kind of sausage works best?
Fully cooked kielbasa is my preference because it browns beautifully and heats through quickly. Smoked sausages also work well. If you plan to use raw sausage (for example, fresh Italian sausage), adjust cooking so the sausage cooks through—see similar Italian sausage sheet pan recipes for guidance.
How do I cook pierogies this way?
Traditional pierogies are boiled then sautéed in butter with onions, which is delicious but requires extra pans. For this sheet pan meal, simply toss frozen pierogies with oil and seasonings and roast them on the pan. The oven crisps the edges while keeping the centers light and fluffy—an easy, tasty alternative to boiling.
Can I use homemade pierogies?
Yes—homemade pierogies should work, though I haven’t tested them in this exact method. They’re wonderful either way; if you try it, let me know how they turn out.

Pin Recipe
Ingredients
- 2 (14 ounce) packages kielbasa
- 2 medium onions, peeled, halved, and cut into 1/2-inch strips
- 12 baby bell peppers (or 2 large bell peppers), stemmed, seeded and cut into 1/2-inch strips
- 1 tablespoon olive oil
- 1/2 teaspoon plus 1 teaspoon kosher salt, divided
- 1/2 teaspoon freshly ground black pepper
- 24 frozen pierogies
- 2 tablespoons canola or peanut oil
- 1 tablespoon chili powder
- 2 teaspoons Tabasco or preferred hot sauce
- 1/2 teaspoon granulated garlic or garlic powder
- 1/2 teaspoon granulated onion or onion powder
Optional for serving:
- Robust mustard such as grainy Dijon, smooth Dijon, or spicy brown
Instructions
- Preheat oven to 400°F.
- Cut the kielbasa into 4–6 inch lengths and arrange them around the outside of a sheet pan. In a large bowl, toss the onions and bell peppers with the olive oil, 1/2 teaspoon kosher salt, and black pepper. Transfer the vegetables to the pan, placing them between the kielbasa pieces.
- In the same bowl, toss the frozen pierogies with canola or peanut oil, chili powder, hot sauce, granulated garlic, granulated onion, and the remaining 1 teaspoon kosher salt until evenly coated. Arrange pierogies in a single layer in the center of the sheet pan, trying to have as many as possible touching the pan without stacking.
- Bake for 15 minutes, then flip any pierogies that weren’t touching the pan so they make contact. Bake an additional 15 minutes (about 30 minutes total), until pierogies are puffy and golden at the edges, kielbasa is plump and browned, and onions and peppers are crisp-tender. Serve immediately with mustard and a salad.
