The result was unexpectedly delicious.

The next morning I cut the slab into squares and called my usual taste testers. The tray vanished in minutes. I’d made three pans, anticipating the reaction, but I wasn’t about to reveal that secret. The remaining pans went to the local farmers’ market the following day, where other adults agreed: “These taste like Snickers—are they really good for me?” Yes—they are.

Energy Bar Recipe

Choose dates that are moist rather than overly dry; they blend more easily and give a better texture to the finished bars. For almonds, raw or toasted works—toast them for a deeper, nuttier flavor, or keep them raw for a milder taste. Any natural nut butter will work: peanut, almond, or sunflower butter are all good options.

Fit a food processor with the metal blade. Add the almonds and pulse until they’re finely chopped, resembling fresh breadcrumbs. Add the chocolate chips and pulse until the chips are finely chopped and evenly distributed with the nuts. Pour this mixture into a large bowl and set aside.

Add half of the dates to the food processor and process until they form a sticky paste. Add 1 tablespoon of the nut butter plus half of the chocolatey nuts, then process until evenly combined. Scrape this mixture into the prepared pan. Repeat the process with the remaining dates, nut butter, and nuts until all ingredients are processed and layered into the pan.

With wet hands, press the mixture evenly into the pan. Fold the excess parchment over the top and place a flat, heavy object on the bars to compress and smooth the surface. Refrigerate for at least 2 hours to firm up before slicing.

To slice:

Use the parchment overhang as a sling to lift the firm slab onto a cutting board. Slice into the desired size (about 30 small squares is my preference). Store the bars in a tightly covered container in the refrigerator. At room temperature, the bars will keep covered for up to 48 hours.
